
Culinary grads learn how to cook up a business
Reem Helou was listening attentively. It was the last day of her menu planning class in the Community College of Allegheny County's (CCAC) culinary programme. Her professor, Charles Wallander, an adjunct instructor and advisor at the school, was going over the final assignment, which was due before the stroke of midnight that night.
'If you're going to be, at some point in time, an owner, a director, a general manager, a chef, anybody who's in charge of menu items, you've got to know how to price out and how to create menus,' he said.
'A menu is also a business plan,' said Wallander, who has held numerous positions in the hospitality industry. The information you use to plan a menu, he explained to his class, is information you could take to a bank to get a loan, for example. Baked into what some might think is a simple sheet of paper is the restaurant concept, target market, price point, location, a demographic study of the location (how busy it is, age groups, marital status of the local population, income, ethnicity) and a feasibility study (including costs and consideration of how a specific concept will work in a specific neighbourhood).
For Helou, the menu planning assignment was 'probably one of the hardest projects I've ever had to do in my life. ... Very hard, but very good.' Originally from Homs, Syria, she was driven to emigrate, with her family, by the civil war in her home country. Now 30, she left Syria at 17, and moved to Detroit to live with her sister. (Her parents moved to Ohio.) When her sister and her sister's husband moved to Pittsburgh, she moved with them. Upon arrival, she was not even sure if her family would be staying in the US. Once settled in Pittsburgh, she had a few false starts in her studies. Initially, she earned a CCAC degree in early childhood education, then studied creative writing at the University of Pittsburgh.
She decided to pursue an associate's degree in culinary arts because she had been working at a local restaurant as a server and then had been promoted to manager. 'That's when I was like, OK, I want to learn more about the industry,' she said. But as part of the program, she had to learn cooking skills as well as management skills — and she realised she loved cooking. That changed her career path from front-of-the-house manager to chef. She currently is a pastry chef at the Argentinian restaurant Balvanera in the Strip District, where she works under head pastry chef Ginger Baldwin. The opportunity to learn baking and pastry with chefs at CCAC has been 'great,' she said, and her experience at Balvanera 'amazing.' Before continuing on her career, though, she had to finish her project.
For the final project, besides concepting, analyses and so on, students had to price out a recipe and indicate how they arrived at the figure. They had to research ingredients and prices of preparing dishes, including easily forgotten ingredients like spices, and consider the 'free' items that go with certain plates — like rolls, butter, sides.
Although not difficult, there was a lot of math involved. Students had to explain how they would accommodate dietary restrictions, and consider the typography of the menu, the placement of items on the menu (high-profit items are given the top right corner) and the organisation of dishes into categories (appetizers, soups, salads, entrees, sides). Then there's the psychological, marketing aspect that goes into menu writing. Wallander offered up a succulent-sounding example: 'A six-ounce Black Angus filet mignon char-grilled to perfection, drizzled with a savory chanterelle mushroom sauce.'
'When you read a good menu description, you can almost taste it,' he said.
Included in the project was also a one-page training document to explain to servers how to market the menu, how to upsell and steer customers to high-value items. 'You should really love your menu,' Wallander said. 'It's the most important thing in the house.'
The following week, the projects had been submitted and amid the strains of 'Pomp and Circumstance' at universities and schools all around town, CCAC culinary students were also graduating.

Argentina to get $20 billion IMF loan
Argentina's maverick pro-free market President Javier Milei went with hammer and tongs – in his own words a chainsaw – to set the sinking economy with its soaring inflation in order through the-now-familiar-remedies of reducing the size of the government, subsidies. He had pushed the economy to the brink of collapse in the opposite direction. He needs a loan of $20 billion from the International Monetary Fund (IMF). And on Tuesday, the IMF team had agreed in principle to give the loan, and the final decision now rests with the executive board. Milei needs the IMF rescue package so that he can keep up the foreign exchange reserves and there is no default in paying the loans. Meanwhile, the majority of Argentinians, mostly the poor and those who are nearly poor, are paying the price for Milei's ruthless austerity measures. But the pop economist and television-presenter that he was before he plunged into politics more than two years ago will not be able to save the economy if he does not get the IMF loan. The IMF loan of course comes with its own stringent conditions. Sometimes, the IMF loan and its repayment process in itself becomes a trigger for the collapse of the economy, and Argentinians remember well that this had what had happened with the IMF loan in 2001. Milei has however other worries. The $20 billion loan will be released in tranches and not at one go. He hopes that the first tranche will be substantially large enough to balance the tilt in the lopsided economy. Meanwhile, the country's trade unions have gone on a general strike, and life had come to a standstill in Buenos Aires. Most of the people who have responded to the strike calls were pensioners. One of Milei's measures was his refusal to adjust the pension amount to the inflation rate. As a result what they get as pension remains woefully inadequate. This is the third general strike, and Milei does not seem to be unduly worried about its impact. He is much more concerned about the size of the first tranche of the $20 billion loan from the IMF. If the IMF had refused, he would have had to borrow from another country. As a matter of fact, Milei, a great admirer of US President Donald Trump and an ardent fellow-free market advocate, was looking to Washington for the foreign bailout. The IMF loan if managed prudently should help Argentina recover from the economic turmoil, but it does not seem to be the end of troubles. The loan can help Argentinian businesses to stabilise and increase their productivity. At the same time, the businesses and manufacturers need to create jobs and pay reasonable wages. The austerity measures have helped in reducing inflation, but low inflation in itself is not much of a remedy. There is need for jobs, and if the production both on the front of primary goods and the manufactured goods is on a firm footing, this could lead to the hoped-for stability. Many a time, the kind of shock treatment meted out by the likes of Milei to an economy that was caught in the inflation spiral is that it leads to other extreme fallout. The remedy of austerity measure has the likelihood of becoming worse than the uncontrolled inflation spree. So, Milei has the difficult task of piloting the economy through the phase of recovery. Milei has a good precedent in Brazil's president from 1995 to 2003, a sociologist who guided a fragile Brazilian economy through a difficult period. Milei may have to up his sledgehammer free market methods and adopt more calibrated economic policies at home.

Crypto worth $99 million withdrawn from Milei-backed Libra token, say researchers
Around $99 million worth of cryptocurrency was withdrawn from the marketplace of a coin at the centre of a scandal in Argentina by eight digital wallets linked to the crypto token's creator, blockchain researchers said. Argentinian President Javier Milei recommended the little-known crypto coin $LIBRA late on Friday in a post on X, but later deleted the post and denied having any link to the cryptocurrency. A federal judge is investigating the token's launch and Milei's involvement in it, after the coin, promoted by Milei on Friday, soon shot up above $4.50 apiece then plummeted just hours later. Milei has accused his rivals of trying to take advantage of the situation. According to blockchain researchers Chainalysis, eight crypto wallets withdrew roughly $99 million worth of tokens from the $LIBRA token's so-called liquidity pool - a kind of crypto marketplace where people can trade. Chainalysis could not confirm the identities of the owners of the wallets that withdrew the crypto, but said they were wallets that received tokens directly from the creator of $LIBRA. "The on-chain behavior suggests that these addresses are closely related to the Libra creator team based on the fact that those addresses were funded directly from the Libra token creator," Chainalysis told Reuters. Chainalysis did not comment on when exactly the funds were withdrawn. Meme coins are crypto tokens that feature branding or names referencing memes or internet trends or jokes. They often collapse after quickly soaring in value as earlier traders take profits. While the coins have long been a fixture in the crypto industry, it is rare for them to involve politicians. In a surprise move, U.S. President Donald Trump and his wife launched their own last month. The tokens withdrawn from Libra's liquidity pool were the stablecoin USDC and another cryptocurrency called SOL, or Solana, Chainalysis said, adding that the dollar value of these funds varies as token prices fluctuate. Another blockchain analytics firm, Nansen, told Reuters on Wednesday that wallets which removed tokens from Libra's marketplace "still hold a combined value of about $87 million". Nansen said "it is fair to say that there is still a lot of money in the hands of those related to the Libra launch." The value of holdings can change in dollar terms as the price of the cryptocurrencies they are stored in changes. The token was launched on a crypto exchange called Meteora. The exchange could not immediately be reached for comment. From Sunday to Tuesday, 70% of wallets trading $LIBRA lost money, Nansen said. PLAN GONE WRONG Hayden Davis, whose now-unavailable LinkedIn page said he is CEO of a crypto company called Kelsier Ventures, described himself in a statement on the company's X account on Sunday as a "launch advisor" for the token. Davis said in the statement that he had as much as $100 million of crypto from the Libra marketplace under his control, without describing how or why he acquired the funds. He said he intends to "reinvest" this money back into the token. "I was to make it unequivocally clear that I have not, nor will I, take any of these funds for my personal benefit," Davis said in the written statement on X. In an interview published on Monday with crypto YouTuber Stephen Findeisen, known as "Coffeezilla", Davis said the token was not a so-called rug-pull, a scam in which a coin's backers lure investors, sending its value soaring, then quickly withdraw their funds, leaving investors with worthless tokens. Davis said he had been trying to stop the token falling further. "It's not a rug. It's a plan gone miserably wrong with $100 million sitting in an account that I'm the custodian of," he said.
