
Pad at Celtic Manor Resort: Larkin Cen's stunning menu
Set in the airy conservatory at the Manor House at the resort, Pad offers a relaxed atmosphere, friendly and helpful staff, and a culinary experience you have got to try if Asian food is your thing – or even its not.
We were even lucky enough to get to chat to the chef to find out about more about his concept for the menu and his delight at being back at the Celtic Manor.
Starting the evening with a couple of signature cocktails, including a fruity Singapore Sling, we sat is the big bay window of the bar and watched the world go by – which this particular evening meant watching guests gather in black tie and some fantastic gowns for event at the ICC Wales.
We decided to go for the Imperial tasing menu option (£48 pp) which was packed with delights including Korean Pork Belly Bites, Roasted Duck Massaman and a Whole Seabass with Soy Dressing and Herb Salad.

Kicking off with Shrimp Crackers we knew we were in for a treat – each dish was just bursting with flavour.
The tasting menu is designed to share and made for a wonderfully social meal as we dipped in and out of the bowls with our chopsticks (not in any way expertly but we managed).
To accompany the food we asked for a bottle of sparkling water and were delighted to be offered a range of options to flavour the water – these included a slice of root ginger or lemon grass among others. The ginger added an extra dimension giving the water just a slight hint of the taste – I may well be trying this at home.
We also decided on a bottle of Hutton Ridge Shiraz from South Africa which turned out to be the perfect choice – delicious but not too heavy to drown out any of the delicate flavours coming from each of the dishes.
Tasting menu done, it would have been rude not to sample a dessert.
The Mochi Selection (£8.50) included Coconut, Passion fruit and Mango, and Strawberry and Cream, was yummy.

The Passion Fruit Panna Cotta (£7.50) with Mango lassi was a revelation and beautifully presented.
The menu also offers small plates, bao and dumpling options, larger dishes including steak and a selection of Asian curries and wok dishes.

Going live was 'baptism of fire' for STV news legend Shereen Nanjiani
Ach well, she certainly deserves it. Worked hard but it paid off, as she came to be 'much loved', as every newspaper profile acknowledges, on account of everyone finding her warm, nice and trustworthy. One imagines that's what everyone thought on 4 October 1961 when she was born in Elderslie, in the sunshine state of Renfrewshire. She cut her broadcasting teeth on Hospital Radio Paisley in the late 1970s, reading local news cuttings gathered during the week. After graduating from Glesga Yoonie, where she studied philosophy – makes you think, doesn't it? – she became a trainee journalist with STV in 1983, at the age of 22. However, hardly had she got her Biro out of her pocket than she was asked to present the evening bulletin after the regular presenter, Sheena McDonald, called in sick. 'I was aghast and immediately said I couldn't possibly do it,' she told The Herald in 2017. 'This was the main news programme, the big one, with a million viewers.' However, her boss told her reassuringly: 'Don't worry, if you f*** it up you won't be doing it again.' She didn't flip it up. In fact, she was a natural. And she loved it. Live TV: what a buzz! 'It really was a baptism of fire,' she recalled. 'I still hadn't had any training when I started doing the job for real – but I surprised myself how much I enjoyed it.' (Image: Yui Mok) MAKING THE NEWS SOON, she was appointed joint anchor of the main evening programme, and that was her for the next 20 years, reading all the news fit to blurt, as happy families gathered sociably in front of the television. She was Scotland's first Asian-heritage newsreader and, at first, was not chuffed at the channel's press releases majoring on that. 'I remember thinking, 'Oh, is that what you're seeing?' I was quite upset about it. I … wondered whether that was why I got the job. I thought it reeked of tokenism. 'I actually believe I did get the job on my own merits, but I thought it was a bit cynical of them to present me in that way. I spent much of my career railing against it, not wanting that tag to follow me around. And, of course, I was only half-Asian.' However, her feelings on the issue changed when she realised she'd become a role model for a whole generation of Asian Scots. 'So many young Asian people were coming up to me and saying, 'You've no idea what a difference it made seeing your face on TV.'' Of course, she suffered from imposter syndrome. Every genuine professional does. Anyone who doesn't suffer from imposter syndrome is an imposter. Shereen went on to present many programmes for STV, including religious affairs series Eikon, documentary series Secret Scotland, and a number of live debates and election programmes. She also hosted many of The Herald's Scottish Politician of the Year awards. At STV, she covered Lockerbie, Dunblane and the new Scottish Parliament. She also reported from Romanian orphanages after the fall of Communist dictator Nicolae Ceausescu, from South Africa after the election of Nelson Mandela, and from Pakistan after the 9/11 terror attacks. However, after 20 years of presenting in the studio, she told The Herald, 'it was beginning to feel like Groundhog Day and I just wasn't enjoying it so much'. This turned out to be live radio, and it was on the BBC, hitherto her rivals. Nanjiani helmed, as they say, Radio Scotland's Friday lunchtime programme, Scotland Live. She then went on to present Shereen, a live news and current affairs programme broadcast every Sunday morning with a 'lively panel' of commentators, a guest in the headlines, and reviews of the latest TV and streaming releases. Last weekend, having by now earned the double-edged adjective 'legendary' (it hints of both achievement and, er, maturity), she announced she was stepping away from the mic. For noo. She said she'd loved being part of BBC Radio Scotland, where she'd made so many good friends. 'They made me laugh and they made me think' – see, that old philosophy degree was not a total waste of time, after all – 'and it's always been a joy to come to work in the morning.' However, she felt now was the time to 'get my weekends back again, have a lie in, and explore new adventures'. BBC Radio Scotland commissioning editor Heather Kane Darling said it had been a pleasure to work with Shereen over the last 19 years, adding: 'I know our teams will miss working with her, and we thank her for her professionalism and dedication during her time with us.' Outwith her professional career, Shereen has undertaken several voluntary sector roles, including Ambassador for St Vincent's Hospice, Children's Hearing panel member, Tron Theatre board member and chair, and National Theatre of Scotland board member. COPPING LAUGHS SHE once appeared as herself in a memorable episode of BBC police spoof comedy Scot Squad, in which she tried – and failed – to present a harassed Officer Karen with a certificate declaring her one of Scotland's community heroes. The first comment under the relevant YouTube clip reads: 'SHEREEN!!!! LEGEND!!!' My understanding is that the number of exclamation marks indicates the strength of emphasis. In 2019, Shereen was invited to join the British Empire, receiving an MBE at Buckingham Palace from Charles, Prince and later King of England and the Other Bits. Asked by The Herald's Marianne Taylor if she'd ever been tempted to move to London, following in the footsteps of other Scots like Selina Scott, Kirsty Wark and Lorraine Kelly, she replied: 'I've always been very comfortable in Scotland. I suppose I was always comfortable with the Scottish people, too … I like my life here. Maybe I could and should have spread my wings, but I have no regrets.' That's the spirit. Japón at The Setai has officially landed on the Prix Versailles 2025 list of the World's Most Beautiful Restaurants—and if you've ever sipped a cocktail under its gold-leaf ceiling while aerialists twirled above a fountain, this news will surprise exactly no one. Tucked inside the luxe courtyard of The Setai Miami Beach, Japón is an extravagant homage to Japanese craft, interpreted with the kind of over-the-top flourish only Miami can pull off. Designed by Saladino Design Studios, the space is saturated in symbolism and maximalist beauty, anchored by the image of the crane, Japan's symbol of grace and good fortune. A custom mosaic crane greets guests at the entrance and the motif ripples through fabrics, murals and a towering pagoda out back. The moody dining room is layered with temple-style ceilings, glossy green-blue paneling and woodblock prints from the 1800s, giving the feeling of the salon of a globe-trotting art collector. One room is sectioned off by a hand-painted, gold-foiled glass mural, while another glows beneath a gold-leaf ceiling and vintage paintings. Even the bar gets the star treatment, with marble ribs and custom wallpaper. Add a retractable roof and you've got one of the most striking indoor-outdoor dining environments in the city. As for what's on the plate, chefs Vijayudu Veena and Iván Monzón deliver an Asian-fusion lineup with hits like truffle hot pot, miso salmon, hamachi crudo and tuna pizza on a crispy wonton base. And yes, those illuminated fan dancers and acrobats you saw on TikTok are real. They perform above the decorative pool, giving new meaning to 'dinner and a show.' Though the food leans more pan-Asian than personal, Japón is a vibe—and that's exactly what the Prix Versailles awards. The list, which includes just 16 restaurants globally, celebrates design that feeds the senses. Whether or not Japón takes home the final global title in December, it's already a star in Miami's dining galaxy.

International Sushi Day: Nika Club Omakase and its 100% gluten-free proposal
It is the quintessential ancient Japanese dish and has millions of fans worldwide. Sixteen years ago, an American expert on the subject decided to set a day on the calendar to celebrate it, and thus the current date was recorded: today, June 18th, International Sushi Day is celebrated. Argentines are devoted to meat, yes, but we love sushi, which has ceased to be an exotic food to become a dish consumed frequently, and in some cases weekly. There are many options in the city, but some places, due to their quality, technique, and flavor combinations, have earned a reference spot, as happened with Nika Club Omakase, in Palermo Hollywood. The place opened a year and a half ago, with a 100% gluten-free proposal and a kitchen led by chefs Belén Higa and Mako Moriyama, who reinterpret the essence of Japanese omakase with technique, flavor, and a contemporary outlook. What is omakase? For those who recently jumped on the latest gastronomic trend of omakase, it's worth refreshing a fact: Mako Moriyama, originally from Neuquén but with Japanese parents, was one of the sushimen who, back in 2009, was part of the Club M Omakase team—a small dining room that operated just meters from the current Nika, at a time when no one was familiar with this now-trendy term, which in Japanese means 'I leave it in your hands.' In line with a sustainable philosophy, local products have been added to the Japanese technique and tradition. With a calm voice and serene gaze, Mako tells Time Out he entered the gastronomic world over 20 years ago and that his first job was as a dishwasher. Over the years, and with full studies at the Argentine Gastronomic Institute (IAG), Mako climbed the ranks and gained renown. 'At Nika, besides being gluten-free, we have a kitchen low in sodium, fats, and sugar. Both in the dishes and at the sushi bar, we always try to avoid industrial products as much as possible,' says the chef, who today serves as head of the lunch sushi bar. "We are gluten-free, with a kitchen low in sodium, fats, and sugar" Among many other things, at Nika they make their own soy sauce because all the ones available in the market, explains Mako, contain wheat. 'Almost everything is made in our kitchen. With some products, artisanal gluten-free preparation is more complicated, so we turn to industry, like with gelling agents for pastries. But this is the minimum indispensable. We also try to minimize waste in all work processes,' emphasizes the sushiman. A zero-waste omakase As part of a zero-waste philosophy, nothing is discarded at Nika. Everything is used and reused. One example of this concept is reflected in the diner's experience, as the meal usually begins with something very oriental: gohan [typical Japanese rice] with furikake, a homemade seasoning prepared with dehydrated and ground ingredients, which can have many variants. 'We serve furikake at the start because in Japanese cuisine it works as an appetizer, something that makes you salivate to start getting hungry,' explains the chef, son of Japanese parents and born in Neuquén. 'Right now, for example, the kitchen team is preparing a furikake with fish bones. A demi-glace sauce is made, the fish—after drying—is ground and served as an umami factor in the furikake. Also, citrus peels or leftover bits of vegetables are reused for the vegetarian furikake. It's part of the philosophy.' Along the same lines of sustainability and love for traditional cuisine, Mako proudly talks about Nika's fermentation library, which, although not visible to everyone in the dining room, curious diners can ask permission to visit the kitchen and admire it. 'Seasonal products and natural ferments are key in our menu,' says Mako. 'This allows us to prepare unique dishes. There are ferments that are over a year old, and Juan Panizza, who knows the most about this, takes care of all of it.' "Seasonal products and natural ferments are key in our menu" What are ferments? In Panizza's words, 'ferments are a key tool in our gluten-free kitchen because they help transform flavors, add umami, and improve digestion.' They use misos made from legumes and rice, naturally fermented wheat-free soy sauces, and fermented broths better known as garum. 'Fermentation is an ancient technique that turns proteins into liquids full of flavors. In these fermentations, we use koji, a fungus that activates enzymes and enhances flavor,' Panizza explains. 'This way, we achieve live, complex, and unique preparations. Additionally, we ferment plums, chili peppers, strawberries, tomatoes, and peaches, which combined with a percentage of salt develop acidity and depth naturally. Thanks to this kind of fermentation, we have a variety of raw materials throughout different seasons.' Nika Club Omakase: one room, two proposals To enter Nika, you climb a staircase leading to the first floor, and newcomers are surprised by a room where everything adds warmth—from the furniture, the tableware, to the light filtering through large windows overlooking the street. At Nika, depending on the client's preference, one can choose the à la carte menu or the omakase experience. For those who surrender to the will of the itamae, their place is at the sushi bar, and the experience is unique because diners have the chance to have a one-on-one with the sushiman, watch the sushi being prepared, and ask questions. 'Feeding someone I don't know and having the customer leave happy is one of the greatest satisfactions this profession gives me,' Mako confesses. 'Also, with sushi now well established in Argentines' palates, there are more opportunities to experiment and for people to dare to try other Japanese dishes. Now that Nika has a large kitchen, we are working hard.' "Feeding someone I don't know and having the customer leave happy is one of the greatest satisfactions this profession gives me" At Nika, they celebrate International Sushi Day with a special menu 'It's a proposal where we combine the best Nikkei sushi pieces, which people love, with some more traditional ones, mainly consumed in Japan,' Mako says. 'That's why we added a futomaki, which is a nori seaweed roll on the outside and vegetables inside, something quite common in Japan and served often at family gatherings, end-of-year parties. But it's a piece you don't often see here. The name futomaki refers to the size of the piece, because 'futo' means large, and 'maki' roll.' There will also be miso soup to enjoy, 100% gluten-free, and traditional dishes like tamagoyaki. 'Basically, it's an egg omelet. It's made on a special square pan and rolled on itself with a special technique,' Mako explains. 'Tamagoyaki is so common in Japan it's even served in kids' lunchboxes for picnics. It provides much-needed protein.' A club for exclusive and pampered customers Finally, as an upgrade Nika offers its clients the chance to become members of the Omakase Club, an exclusive members-only room with a distinctive touch and many benefits. So far, 17 clients, or 'clubers,' are part of this membership, attending special events and always being considered for unique and exclusive experiences. Clubers are pampered, invited to try the latest kitchen creations, and the room is prepared and arranged for them if they want to celebrate their birthday.
