3 Easy (and Delicious) Ways to Eat Well This Summer

Summer officially starts this weekend, but it's already underway in my kitchen. Ripe berries and peaches are at their best, and heirloom tomatoes, fresh corn, glossy eggplant and zucchini are just waiting to be invited to the table. But I don't blame you if you don't quite know where to start.
At NYT Cooking, we believe the path to healthier eating starts with cooking more at home. And there's plenty of research that shows the benefits of fruits and vegetables and, for that matter, eating less meat.
My strategy has always been fairly simple: Build meals around the season's produce; add proteins that don't need much, or any, cooking; then go all in with the condiments, herbs and spices. You'll find a few more of my favorite tips below.
Take your preferred protein — rotisserie chicken, canned beans, quick cooking salmon filets — then, instead of sides, add lettuces, herbs, tomatoes and other vegetables to turn it into a vibrant main course. The two recipes below do just that, pairing salmon, chicken and chickpeas with loads of greens.
Grilled salmon salad with lime, chiles and herbs: A pungent dressing — featuring lime, fish sauce, chilies and shallot — is the real jewel of this five-star recipe. You can grill the salmon on a balmy night if you feel like being outside, or roast it in the oven if you don't. Feel free to add any fruits or vegetables like cucumbers, tomatoes, watermelon, leftover grilled zucchini or corn. This multi-textured dish is a perfect home for any or all of them.

As their guests let loose on the dance floor, the bride and groom slipped away – only to return outside, ready to dash down a slick, water-soaked slide set up as a surprise. Fully dressed in their wedding attire, Rachel Schneider, 30, and Tristan Price, 31, took the plunge just minutes before boarding a party bus. The spontaneous sendoff was the perfect reflection of their fun-loving bond, exactly six years to the day after they first met. 'This was a surprise - we didn't tell any guests that we were doing it. Two guests saw it being unloaded but swore to secrecy for the night,' Schneider tells PEOPLE exclusively. 'We weren't able to see reactions being on the ground, but from what guests said and the photos, it seemed like a vibe.' And that's exactly what it looked like to Schneider's photographer, Rachel Scott, 30, who tried her very best to capture all the excitement on camera. 'Their entire wedding day was so full of love, laughter, and emotion, and this moment felt like the perfect, completely 'them' ending,' Scott recalls. 'It was unexpected, fun, and honestly just such a beautiful reflection of their personalities. The entire crowd was cheering, it was electric.' When asked if there was a deeper meaning behind the water slide, Schneider said there wasn't. It was simply a spontaneous, last-minute addition to the wedding plans. In fact, it was so unplanned that there wasn't enough time to set it up for guests to join in, making it a wild, private moment just for the two of them. 'It really felt like the couple shedding the formality of the day and jumping (literally!) into the start of their new chapter. Moments like that are what make wedding photography so magical.' The bride and groom had no problem getting soaked, as long as they were having a good time. 'It was absolutely worth it, and so were all the little things we did to make the day special that weren't captured,' Schneider shared.
