I'm a mom of 4 who loves shopping at Costco. Here are my favorite ways to use the $5 rotisserie chicken.
As a mom of 4 who's been shopping at Costco for 10 years, the $5 rotisserie chicken is my go-to.
I shred it as a base for yummy salads, use it to make crispy tostadas, and turn it into chili.
I use the remaining parts of the chicken to make a tasty broth in bulk.
I've been a Costco executive member for 10 years, and as a mom of four, the store's rotisserie chicken is my secret weapon.
From delicious salads to savory soups, here are my five favorite ways to feed my family using the $5 rotisserie chicken.
I shred the chicken and add it to a delicious quinoa and sweet potato salad.
I love adding rotisserie chicken to a quinoa and sweet potato salad recipe I found on Sprouted Kitchen.
The salad includes lots of nutritious ingredients like sweet potatoes, kale, quinoa, lentils, and vegetables. The rotisserie chicken also boosts the protein content, making this salad a well-rounded meal.
The chicken tastes great as part of a tasty tostada recipe.
Mixing the leftover chicken with canned green chiles, tomato paste, spices, and chicken broth gives it new life.
I like to pile that mixture on a crispy tortilla topped with pickled onions, avocado, and romaine lettuce. In less than 30 minutes, I have a dinner that makes my entire family happy.
A creamy chicken chili makes the perfect dinner on cold nights.
Cool fall nights call for chili, but when I don't have time for my pot to sit on the stove all day, I make a quick, white-chicken version instead.
I like to use a recipe from The New York Times, which calls for an onion, a jalapeño pepper, garlic, cannellini beans, diced green chiles, chicken broth, corn kernels, and spices.
Costco's chicken is the perfect addition to a classic Waldorf salad.
I like to use shredded chicken as the base for a Waldorf salad, which also includes lettuce, grapes, walnuts, apples, celery, and mayonnaise.
It tastes great on its own or piled onto crackers or bread.
I use the leftover chicken to make a broth.

Costco customers campaign for return of beloved $1 treat — despite new food court offerings
Costco's been rolling out plenty of new food court offerings this summer – but many of the wholesaler's most loyal fans are longing for an old favorite. A recent discussion on Reddit focused on the long-gone $1 churro at Costco. This particular social media community is home to over 1.3 million Costco customers. Costco has served churros on and off throughout the years. The treat fell off the food court menu in early 2024 to make way for the viral Double Chocolate Chunk Cookie. At the time, it sold for $1.49. The recent Reddit post about the churro garnered some 5,500 likes, with over 300 members chiming in. 'Who misses the churro????' the original Reddit poster wrote. 'I miss the churro. When they were fresh and crisp, they were great,' one person said. 'Although neither compares to [the] toasted almond ice cream bar.' 6 A recent discussion on Reddit focused on the long-gone $1 churro at Costco. Christopher Sadowski A different user wrote, 'Us big ol' women down in San Antonio miss them.' Other commenters praised the original churro but said it changed for the worse after the 1990s. 'Churro was good until they changed the recipe and then it sucked,' one Redditor wrote. 6 The churro fell off the food court menu in early 2024 to make way for the viral Double Chocolate Chunk Cookie. Nelea Reazanteva – Another reminisced, 'I miss the churro from the '90s. The one pictured was no bueno.' But some customers were unimpressed by the cinnamon-and-sugar dessert and called for the pre-churro pretzel offering. 'Reminder: The pretzels that the churro replaced were so much better,' a customer said. 6 Some commenters praised the original churro but said it changed for the worse after the 1990s. dennizn – A different user wrote, 'I will complain about them replacing the pretzel with the churro until the day I die.' A possible reason the churro hasn't been brought back may be the treat's low price tag. Costco's signature $1.50 hot dogs have stayed at the same price since 1985. 6 Some customers were unimpressed by the cinnamon-and-sugar dessert and called for the pre-churro pretzel offering. Grandbrothers – This summer, Costco announced it would bring back its combo pizza – but in a slightly different form. Priced at $6.99, the 'Combo Calzone' is stuffed with pepperoni, sausage, cheese, onions, peppers, olives and mushrooms. Costco also recently began selling a frozen strawberry lemonade drink in its food courts. 6 A possible reason the churro hasn't been brought back may be the treat's low price tag. pimpampix – The drink, made with real fruit and no artificial flavors or colors, costs $2.99 and is said to contain only 250 calories. But the drink has received mixed reviews from the wholesaler's members. 'It's good but too sweet for me,' one commenter wrote. 6 Costco also recently began selling a frozen strawberry lemonade drink in its food courts. gabriel – 'Had one. It's a bit tart so be prepared! But refreshing,' another member said. Unsurprisingly, some members invoked the beloved churro. 'I want the churro back,' one blunt customer said. Fox News Digital reached out to Costco for additional comment. Fox News Digital's Peter Burke contributed to this report.

Royal Ascot: Catherine, Princess of Wales, cancels at last minute
June 19 (UPI) -- The Princess of Wales unexpectedly pulled out of attending Royal Ascot at the last minute, with officials saying it was related to her recovery from cancer. Kate Middleton skipped the Royal Family's traditional excursion to the event 30 miles southwest of London on Wednesday, which is a key fixture in the country's horse racing calendar. The decision came amid efforts to strike a balance as she eases back into her public role as the wife of Prince William, Kensington Palace said. An official told The New York Times she was "disappointed" not to be able to attend, adding that she needed to find the "right balance" in the level of public engagements she takes on. The decision was very likely unplanned. Two hours before a royal procession along the Straight Mile that kicks off the event was to take place, she was still listed in the official program as being in the second carriage with husband Prince William, behind the king and queen. In the end, William arrived from Windsor in his father's carriage along with Queen Camilla and Prince Saud bin Khalid Al Saud, a member of Saudi Arabia's Royal Family. It was the 200th anniversary of the procession, which was begun by King George IV in 1825. On that occasion, the Duke of Wellington rode along in George's carriage. Carole Middleton, Kate's mother, did attend the event. The princess has been gradually returning to her public duties after announcing she was in remission in January, with her most recent appearance at an Order of the Royal Garter service in Windsor, where she was seen smiling and chatting. Two days before that, on Saturday, she attended the Trooping of the Color in London, a military parade celebrating the monarch's official birthday. It was the second consecutive year the princess had missed Royal Ascot. She was unable to attend in 2024 as it came three months after she announced she had been diagnosed with cancer in March. However, The New York Times speculated that her absence on Wednesday may have had nothing to do with her recovery, but was related instead to the event itself or the weather. Wednesday was one of the hottest days of the year with temperatures in the mid-80s F. King Charles is a fellow cancer survivor, receiving his diagnosis in February 2024, three weeks after he was hospitalized for treatment for an enlarged prostate at the same hospital where his daughter-in-law was recovering from major abdominal surgery that would take months to heal. The late Queen Elizabeth II, somewhat of a racing fanatic, was closely linked with Royal Ascot. Race horses she owned or bred won more than 20 titles at the world-famous track over the course of her seven decades on the throne. Copyright 2025 UPI News Corporation. All Rights Reserved.
