
TV favourite Julie Goodwin shares her easy and delicious dinner that's a chicken pie cross a potato bake
Julie Goodwin won the first season of Masterchef in 2009.
Today, Julie is making chicken and leek pie.
Instead of pie crust Julie tops this pie with potato bake.
The recipe was actually inspired by her sons love of both dishes and she combined the two together.
Recipe below:
Chicken & leek pie with potato bake top
SERVES 4 PREP + COOK TIME 1 HOUR
Ingredients
6-8 (800g) medium washed potatoes
1 tablespoon olive oil
600g chicken thigh fillets, cut into 3cm cubes
1 leek, white and pale green parts, sliced 5mm thick
3 cloves garlic, chopped
1 brown onion, diced
2 tablespoons plain flour
1¼ cups chicken stock
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon ground white pepper
300ml sour cream
¾ cup grated tasty cheese
fresh chives, green beans, for serving
Method
1 Preheat oven to 180°C fan-forced.
2 In a medium saucepan over high heat, place the potatoes into salted water and bring to the boil. Boil for around 20 minutes or until a skewer goes easily through them. The time will depend on the size of the potatoes; don't overcook them. Drain and set aside to cool while you cook the pie filling.
3 Meanwhile, heat one teaspoon of the oil in a medium, heavy-based oven-proof frypan or shallow enamel casserole, and brown half of the chicken. Remove to a bowl and repeat with another teaspoon of oil and the remaining chicken. (It only needs to have some golden colour, not be cooked all the way through at this stage.)
4 Heat the remaining oil in the pan and sauté the leek, garlic and onion until fragrant and translucent. Return the chicken to the pan and sprinkle flour over the top. Stir to coat the chicken.
5 Add the stock, half a cup at a time, allowing the sauce to cook and thicken in between each addition. When all the stock is added, bring the sauce to a simmer and add the mustard, salt and pepper. Remove the pan from the heat.
6 Cut the cooked potatoes into 1cm slices and layer evenly over the chicken mixture. Season to taste.
7 In a small bowl, stir the sour cream until smooth, then spread over the potato. Sprinkle with the cheese.
8 Place the pan into the oven and bake for 30 minutes until golden brown and bubbling. Sprinkle with chopped chives and accompany with steamed beans, if you like.

Meanwhile, Sarah Michelle Gellar - who starred in the original I Know What You Did Last Summer as the ill-fated Helen Shivers - has been given an 'unofficial' role in the upcoming slasher by director Jennifer Kaytin Robinson. I Know What You Did Last Summer - which will hit screens on 18 July 2025 - follows a group of teens who are haunted by a deadly secret after a hit-and-run cover-up. With a masked killer stalking them one year later, the group seek out two survivors from the infamous Southport massacre of 1997 as their past comes back with a vengeance. Previously, Robinson teased I Know What You Did Last Summer would be 'much more brutal' than the original. Speaking with People, she said: '[The horror elements are] ratcheted up to a hundred in this - it's much more brutal. 'There's definitely more methodology to every kill in this movie, unlike the first, which is kind of just him [the killer] stalking them and going after them. 'There's not a lot of gore or blood or violence in the first one. There certainly is in this one.' Robinson added she wanted to make I Know What You Did Last Summer for fans of the original flick, though emphasised the slasher would still be accessible to newcomers to the franchise. She explained: '[We] approached it like super fans, so I think people are going to be really happy. All the things that you want to see in this movie, you're going to see in this movie ... 'We very purposefully wanted to make this movie both for fans of the original who are coming to this and excited about the easter eggs but also for a new audience that can find I Know and almost watch the first one like a prequel. 'That was very front of mind for me as we made this movie. You don't need to do any research coming into I Know What You Did Last Summer. You just have to have a really good time.'

Al Pacino reveals how becoming a father had a major impact on his acting career
Al Pacino's daughter showed him how to act when she was just a toddler. The TV personality and author, 54, first found fame after winning the cooking show back in 2009, beating runner-up Poh Ling-Yeow, and later returned to the franchise for the All Stars edition. Goodwin took to Instagram this week to spruik a cooking segment on Sunrise and also share a sponsored advertisement for a cleaning product – but followers were quick to point out that she looks different. One admitted they 'almost didn't recognise' her with others commenting she 'look[ed] so different'. Fans pointed out that Goodwin looked dramatically different in her new post. 'I am running a business and running around like a mad thing, and sometimes I forget to eat, none of which is healthy.' After her MasterChef win, Goodwin went on to establish a successful career as a cookbook author, columnist, and regular TV contributor, but later admitted she had struggled with her mental health amid her rising fame. She has been in the public eye for nearly two decades. She spoke about it on the Head Game podcast in March, describing it as going 'right down to the bottom of the well'. 'I had made a decision that everybody, everybody, my colleagues, my children, my husband, my family, everybody would be better off if I just racked off and let them all be,' Goodwin said of her battle with depression and anxiety. 'I just had nothing left. It's a sickness, right, severe depression is a serious illness,' she explained. 'The only way I could shut off my brain late at night, was to drink wine, so I was doing too much of that. So I was self-medicating, and that's a terrible, terrible way to sleep, because you wake up with your heart hammering.' Fortunately, as Goodwin recently told Nine Honey, she's now doing much better – but admitted it was an ongoing effort. 'I'm good, I really am.
