Ingredients:
2 croissants
Large handful raspberries
125ml double or whipping cream
1 tbsp icing sugar, sifted plus a little for dusting
1 tbsp flaked almonds
Method:
1. Preheat the oven to 160C and warm the croissants for 5-6 minutes (or as per instructions on pack).
2. Meanwhile, whip the cream together with the sifted icing sugar and set aside.
3. When the croissants are warm, slice horizontally, then spread half the cream onto each croissant then top each with raspberries.
4. Sprinkle with flaked almonds.
5. Pop on the lids and dust with a little icing sugar before serving.

Ingredients:
2 croissants
Pistachio cream
1 tsp chopped pistachios
1 tsp freeze-dried raspberries
Method:
1. Slice open the croissants along the top.

3. When the croissants are warm, slice horizontally, then spread over a little pesto.
4. Add the sliced tomato, mozzarella and rocket salad.
5. Scatter over a few basil leaves and pop on the lids.
6. Finish with sprinkling black sesame seeds.

Broccoli and cashew stir-fry: A Malaysian twist
Malaysian chef Sugen Gopal opened London's Roti King in 2014 and its popularity skyrocketed – with queues famously out the door. Since then, Gopal's Corner – and several other outlets, his newest in Brighton – have opened and now he's released his debut cookbook, Roti King. Here is one of his recipe to make at home. This side dish comes together extremely quickly and would make a great accompaniment to most meals. Here, I use Tenderstem broccoli, but you could easily swap it out for other seasonal green vegetables, such as purple sprouting broccoli, asparagus or green beans. The butter is browned slightly, which gives the whole dish a nutty flavour, further amplified by the toasted cashews.' Serves: 4 Prep time: 10 minutes | Cook time: 10 minutes Ingredients: 300g Tenderstem broccoli 2 tsp salted butter 50g cashews, roughly chopped 2 garlic cloves, finely chopped 2 tsp oyster sauce 2 tbsp crispy fried shallots (homemade or store-bought), to serve Method: 1. Start by blanching the broccoli in a pan of boiling water for 2 minutes, then drain and plunge into ice-cold water. Leave to drain in a colander. 2. Melt the butter in large pan over a medium heat, and once bubbling, add the cashews and then the garlic. Stir frequently and cook until the butter is just starting to brown. 3. Transfer the garlic and cashew mixture to a plate, before adding the drained broccoli to the pan, keeping it over a medium heat. 4. Add the oyster sauce, and fry for 2–3 minutes until the broccoli has started to soften a little (but being careful not to overcook). Chicken or paneer makhani: A ‘desi' Taste
'This is the recipe that put Bindas on the map. It is our best-selling and most sought-after curry: butter chicken,' says food writer and cookery book author, Mehak Kansal. 'A truly decadent, creamy, herby, slightly spicy, slightly sweet curry made with cream and tomatoes. I am sure there will be a permanent fold or bookmark kept on this page. You can use chicken or paneer for this recipe.' Chicken or paneer makhani Serves: 4-6 Ingredients: 700g boneless, skinless chicken thighs, cut into bite-sized pieces, or 600g paneer, cut into cubes Handful of coriander, chopped, to serve (optional) For the marinade: 2 tbsp Greek-style yoghurt 2 tbsp ghee, melted 1 tbsp garlic purée 1 tbsp ginger purée 1 tsp tomato paste (concentrated purée) 1½ tsp ground cumin 1 tsp ground turmeric 1 tsp garam masala 1 tbsp chilli powder 1 tsp salt For the makhani sauce: 3-4 tbsp ghee 1 onion, finely chopped 2 green bird's-eye chillies, finely chopped 2 tbsp garlic purée 2 tbsp ginger purée 1½ tsp ground cumin 1 tsp ground coriander 1½ tsp ground turmeric 1 tsp chilli powder 1 tsp ground green cardamom 1½ tsp garam masala 1-2 tsp salt, according to taste 200g canned plum tomatoes, puréed 1½ tsp caster sugar 300ml double (heavy) cream, plus extra to serve 3 tsp kasoori methi (dried fenugreek leaves) Method: 1. Combine all the marinade ingredients in a large bowl. Add the chicken or paneer to the marinade and stir to coat. Leave to marinate in the refrigerator for at least two hours, preferably overnight. 2. Preheat the oven to 175C (330F/gas mark 3-5). Line a baking tray with foil. 3. Transfer the marinated chicken or paneer to the prepared tray and roast for 25-30 minutes until tender – do not overcook. 4. Meanwhile, prepare the makhani sauce. Heat the ghee in a large, heavy-based saucepan over a medium-high heat. Add the onion, chillies and garlic and ginger purées, and cook for five to seven minutes, stirring occasionally, until the onion is brown and caramelised. 5. Add the ground spices and salt, along with the puréed tomatoes, and reduce the heat to medium–low. Cover and cook for 10 minutes, then stir in the sugar and reduce the heat to low. Allow the sauce to gently bubble for two minutes, then take the pan off the heat. 6. Use a hand blender to purée the sauce until nice and smooth, then return it to a medium heat. Cover and cook for five minutes, stirring every minute or so. Once the ghee starts rising to the surface, add in the cream, then crush the kasoori methi in your hands and sprinkle those in too.
