Malaysian-born Junda Khoo 's Ho Jiak has four iterations across Sydney, including the hatted Town Hall restaurant. Now, Khoo has brought his thrilling brand of Malaysian cooking to Melbourne with a three-level, three-in-one venue on Rainbow Alley in the CBD.
The first two venues opened in late May: fast-casual Da Bao, serving home-style Malaysian dishes on street level, and beer hall Ho Liao, doing Malaysian classics with a twist on the top floor. But the jewel in the crown, Ho Jiak – Junda's Playground, opened in mid-June on the level between them.
Here, tamarind-powered Assam laska comes not in a big steaming bowl, but magicked into an icy granita with slivers of raw kingfish. The green-chilli-based sambal ijo is mashed up with the herbs of chimichurri to make a fiery accompaniment for grilled John dory. And hand-picked Northern Territory mud crab crowns the smoky char kwai teow noodles.

Submariners take the plunge with new local craft beer brand
After working underwater for more than a decade in submarines as part of the Royal Australian Navy, Brydon Maslin and Ryan Wilson are now the crew behind local craft beer brand, Deep Elite Brewing. By coincidence, the Adelaide-born brewers both joined the navy on March 10, 2008 but didn't cross paths until they joined the submarine force in Perth. They worked as marine technicians with the Australian fleet around the world, before settling in WA. Both dabbled in home brewing, before deciding to make beer together and joining local ale enthusiasts club West Coast Brewers. The duo started with basic plastic fermenters before transitioning to a stainless steel brewkit. Not one to do things by half, Mr Maslin soon had 14 taps of beer in his back shed so he could host parties, such as birthdays and Oktoberfest celebrations. Mr Maslin jokes that the forms equated to research and development, making those early beers tax deductable. Deep Elite's campaign took what Mr Wilson calls a significant turn when they bought a single canning machine and hand-labeller to make beers for friends and family. 'Their encouragement led us to explore the idea of starting our own brewery,' he said. 'Deep Elite Brewing was born, inspired by our submarine background.' The former submariners secured a wholesale license to brew commercially and began contract brewing at Heroes and Villains, Bright Tank, Limestone Coast and Spinifex Brewery, where Mr Maslin is head brewer and Mr Wilson works on the production line. Credit: Kelsey Reid / The West Australian Their first official release as Deep Elite was a cherry sour, brewed at 3 Rivers Brewery in Mandurah and inspired by Mr Maslin's wife's German heritage. The 38-year-old confessed that he didn't drink beer until he travelled to the Black Forest and one of her relatives told him he'd better learn to love the national beverage. Today, Deep Elite is owned by Maslin and Wilson alongside Lee Tough and non-executive director Alan Donovan. Most investors in the brewery are former submariners, who also turn up to help on canning days when it's all hands on deck. Often featuring seafaring puns and references, Deep Elite beers can be found in around 40 shops and a handful of pubs. Their Xtra Sticky Boy Hazy IPA featuring Pirates of the Caribbean-inspired can art earned high praise at the recent Beer and BBQ Festival in Adelaide. A Deep Elite venue is on the distant horizon, explained Mr Maslin, who is more focused on making the next beer — The Hunt for Red Hoptober, a tribute to the 1990 spy thriller starring Sean Connery and Alec Baldwin.

Eat the rich: Black Swan's new play is biting, entertaining
Never Have I Ever Black Swan Theatre Company Heath Ledger Theatre ★★★ By the time Australian-born, British-based comedian Deborah Frances-White (of The Guilty Feminist podcast) came to write her first play Never Have I Ever, the seismic shift in culture and politics triggered by the exposure of Harvey Weinstein and the murder of George Floyd had moved into a reflective phase. Some argued that the world was more complex than depicted by so-called 'woke' culture — that middle-class white men could be aware of their privilege and power and act decently and that women and people of colour could be powerful and were not always victims. These contradictions are played out beautifully in the very funny opening of Never Have I Ever in which the owners of a swanky London restaurant — working-class chef Jacq (Emily Rose Brennan) and her lover/business partner Kas (Deep Sroa) — have invited their old university friends Tobin (Will O'Mahony) and Adaego (Ratidzo Mambo) to dinner to announce they're shutting up shop and declaring bankruptcy. Jacq and Kas are so progressive they came up with the nutty notion of individual cooking stations to make their customers feel safe in a post-COVID world, a venture backed by the progressive Tobin, who has made a fortune with his ethically driven investment company, supported by high-profile journalist and social justice warrior partner Adaego. Unfortunately, the individual stations idea (beautifully rendered onstage by Bryan Woltjen, shooting flames into the air to coincide with the various emotional eruptions), was so expensive to operate that it sent the restaurant broke despite rave reviews and full sittings. The amiable, understanding Tobin initially laughs off his sizeable loss. However, as Jacq, who dragged herself up from poverty, and the two people of colour take delight in razzing and rubbishing his attempt to make up for his white male privilege he gets increasingly agitated and defensive, setting the scene for seemingly innocuous sexual revelations during the titular drinking game that uncorks Tobin's toxic side. When writer Frances-White is poking fun at the various contradictions of this privileged quartet staking claims for their lower position on the gender/race/class ladder or their efforts to make the world a better place, the play is giddy, sophisticated fun, with the four terrific actors eliciting sympathy for their positions while making us laugh at their narcissism and blindness. 'I'm the Michelle Obama of the group!' declares Tobin, who spends the first act justifying his ethically acquired wealth and criticising the others for claiming to be progressive but making much less real-world impact than he does.
