
Meera Sodha's vegan recipe for grated tomato and butter beans with olive pangrattato
My favourite breakfast is sliced tomatoes on rye bread sprinkled with sea salt. The best bit is neither the tomato flesh nor the bread, it's the salted tomato water that runs down the back of my hands and threatens to meet my elbows. It's liquid electricity and one of my favourite earthly flavours. It could make a great stock, or a delicious martini, perhaps even a marinade for ceviche, but here it's thrown in at the end to refresh a dish of gently cooked tomatoes, beans and dill. Perfect for dunking anything but elbows into.
Ideally, you'll need a food processor or blender for the pangrattato; if you don't have one, tear the bread into small chunks, then toss with the olives, spread out on a chopping board and chop through a few times until you have a fine-ish crumb.

6-8 large ripe tomatoes (750g)Fine sea salt
85g sourdough (ie 1 big slice), chopped, plus extra to serve30g pitted kalamata olives (about 8)Extra-virgin olive oil
2 garlic cloves, peeled and crushed1 tsp ancho or aleppo chilli flakes
2 400g tins butter beans, drained and rinsed – I like Cirio25g dill, leaves picked to get 18g, roughly chopped
Grate the tomatoes into a bowl and discard the skins. Add half a teaspoon of salt, mix, then tip into a sieve and set over the empty bowl to catch the juice – don't discard the juice.
Put the sourdough and pitted olives in a food processor and pulse to fine breadcrumbs. Put two tablespoons of extra-virgin olive oil in a pan on a medium heat and, when hot, add the bread and olive crumbs and cook, stirring often, for about 10 minutes, until dry and crumbly.
Put three tablespoons of olive oil in a large frying pan on a medium heat and, when hot, add the crushed garlic and the chilli flakes, and cook, stirring, for two minutes, until fragrant and light brown. Tip in the drained beans, the tomato pulp from the sieve and a half-teaspoon of salt, turn up the heat to high and cook, stirring every now and then, for 10 minutes.
Tip in the reserved tomato juice from the bowl and half the dill, and stir to combine. Tip everything out on to a lipped platter, scatter the breadcrumb mix on top and finish with the remaining dill. Drizzle liberally with more extra-virgin olive oil and serve with toasted sourdough to ladle the beans on top of.

Spaghetti with gin and a lemon butter sauce
Think of pasta alla vodka. That sweet, slightly tangy, creamy-but-not-in-a-heavy-way sauce which is so silky and clings to the penne. This sauce does a similar thing. The lemon and softened garlic are rounded out by the splash of gin. Plenty of parmesan and black pepper add savoury depth. And cold butter swirled through at the end brings it all together. It's as if pasta al limone and fettuccine Alfredo had a baby. It's fast, satisfying, the perfect Friday night dinner at the end of an odd week. Ingredients 200g spaghetti 2 tbsp olive oil, for frying 4 garlic cloves, finely chopped juice of 3 lemons 60ml gin or vodka 20g freshly grated Parmesan, plus extra for serving 1 heaped tsp of freshly cracked black pepper, plus extra for serving 30g cold butter a few chives, snipped, to serve (optional) Method Step Put a large pan of salted water on to boil. Step Cook 200g spaghetti until almost al dente or according to the package instructions, then drain, reserving 30ml of the cooking water. Step Meanwhile, set a large frying pan over a low heat and add 2 tbsp olive oil. Step Add 4 garlic cloves (finely chopped) and a big pinch of salt. Cook for 2 minutes. Step Add juice of 3 lemons and cook for another 2 minutes, then add 60ml gin (or vodka) and cook for 3 minutes more. Take off the heat. Step Put the 20g freshly grated Parmesan and 1 heaped tsp of freshly cracked black pepper in a bowl. Pour a little of the reserved cooking water in the bowl – just enough to make a paste with the cheese. Step Put the cheese mixture in the garlic pan then turn the heat to medium. Step Cook, stirring vigorously for a couple of minutes, or until you have a sauce which is starting to cling to the spaghetti. Step Turn the heat off, add the 30g cold butter and keep stirring until melted. By now the sauce should be glossy. Speaking of gin, it's national gin day on Saturday apparently. Copy of rare bird book collection worth £127k to stay in the UK
A collection of illustrated bird books worth £127,000 will now remain in the UK after the government intervened to stop the "national treasure" being sold original set of Henry Eeles Dresser's A History of the Birds of Europe was to be sold to a private collector in the US, until a "government export bar" allowed time for a group led by Manchester Museum to buy export ban was granted in 2024 after the Arts Council designated the books as national treasures for their "outstanding significance".Many of the drawings are of birds now believed to be extinct. Henry Eeles Dresser was born in Yorkshire, in 1838, and from a young age had an interest in birds, bird skins, and their trips to mainland Europe culminated in the nine-volume A History of the Birds of Europe, published between 1871 and is considered his most important work, and contains pictures of birds such as the Slender-billed curlew, which was the first-known bird to have disappeared from mainland Europe, North Africa and West Asia. Manchester Museum worked with The John Rylands Library to raise the money needed for the Fund, and Friends of the Nations' Libraries also contributed anthology will be reunited with Dresser's own bird specimens at the museum from Saturday 28 June until Sunday 25 January museum said the books highlights "the vital role historical records play in tracking biodiversity loss over time" and understanding the long-term impact of environmental change."Threats to the natural world and biodiversity have never been greater," said Esme Ward, director of Manchester Museum. Ms Ward added: "While this anthology has historical value, it also speaks to the urgent issues of the present."These books are breathtakingly beautiful and, by bringing them together with natural history collections, we believe they will not only provide scientific benefit but also capture the hearts of future ornithologists and conservationists."The volumes will be made accessible to researchers, students and the wider public at The John Rylands Library after they have been on display at the museum. "Henry Eeles Dresser was one of the most significant and influential ornithologists of the late 19th and early 20th centuries," said Christopher Pressler, Manchester University librarian and the director of The John Rylands Library."He was a producer of beautiful books which combined new scientific information with masterpieces of bird illustration, and a leading figure in scientific society." Campaigner calls for judge-led public inquiry into Windrush scandal
A founder of Windrush Day has called for a public inquiry into the scandal amid this year's 'bittersweet' celebrations of Black Britons and their contribution to national life. Patrick Vernon, who campaigned for the national day for nearly a decade before the government adopted it, said the mistreatment, detention and removal of Black Britons wrongly accused of being in the UK illegally had not been treated seriously enough. Unlike the Post Office and infected blood scandals, Windrush was the subject of an independent review, which can recommend improvements but doesn't have the power, scope and formal standing of a statutory public inquiry. Windrush Day 2025, which falls on Sunday, marks the 77th anniversary of the arrival of the Empire Windrush, the vessel that brought passengers including ex-servicemen from the West Indies to new lives in the UK. They were the first of tens of thousands of workers from former British colonies who played a key role in rebuilding Britain after the second world war. A minute's silence will be held at this year's events – after 12 months in which pioneering members of the postwar generation have died, including two passengers on the Empire Windrush. The thinktank British Future said it was 'a powerful reminder of their courage – and why it's vital they are remembered in British history today'. Vernon said the deaths of elders and the injustice to Windrush survivors meant the commemorations were 'bittersweet'. He said: 'We are witnessing the end of a living era. Significant Windrush pioneers have passed, two of whom were on the Empire Windrush – Alford Gardner, 98, and John Richards, who passed away at 96. 'We've lost Lord Herman Ouseley, who was born in the UK but was part of that generation; Sir Geoff Palmer; Nellie Brown, who died this month at 111, and Clover Samuels, the photographer. By the time we reach the 80th anniversary, how many of the original Windrush pioneers will be left? 'We need to make sure their stories are reflected in the national curriculum, encourage families to start documenting the elders and more oral history – at local regional and national level.'There needs to be a public inquiry. The last review made good recommendations, but because of the way people have been traumatised by the scandal, re-traumatised by the compensation scheme, died before they can be compensated, made homeless, or remain in the Caribbean and Africa, we need a judge-led, independent inquiry that has access to all the documents and can subpoena people. 'A lot of Windrush people are asking 'why are we treated differently? If the Post Office and infected blood scandals can have a public inquiry, why can't we?'' The Home Office has appointed the Rev Clive Foster as Windrush commissioner to advise on improving the compensation scheme. It says it is 'determined to ensure victims are heard'. Windrush Day events across the country include: a Caribbean festival in Alexandra Park, Manchester; the Big Caribbean Lunch in Windrush Square, Brixton; Forgotten Heroes, a production in Bristol about Black second world war veterans; and former footballers Gary Bennett, Howard Gayle and Reuben Agboola meeting supporters at the Fans Museum, Sunderland.
