
Seafood Made Simple: How to make a classic fish and chips
Fish and chips, in any of its forms, is always a winner.
This weekend, I'm sharing my preferred method for making chips at home. I've opted for some skin-on wedge-shaped chunks, but slice as you wish if you'd prefer a typical chip.
I adopt the same method one would use to produce the perfect roast potato, par-boiling the spud before roasting in a preheated oven, allowing for maximum crunch.
Adding some unpeeled cloves of garlic and rosemary to the potatoes whilst simmering in salted water brings so much flavour; don't discard them after draining as they'll crisp up wonderfully in the oven.
Choose a floury potato variety for this recipe, such as Maris Pipers or Rooster potatoes.
Salsa verde is one of those classic sauces served with seafood. It's a brilliant recipe to have in your repertoire if you've got herbs growing in the garden this time of the year.
Any soft herbs will work like tarragon, chervil, fennel fronds, even a little lovage perhaps.
Swap the capers for a fresh or pickled jalapeno and mint and dill for some fresh coriander if you'd like something with a little heat.
I've used a food processor for ease here, but you can, of course, finely chop all the ingredients to achieve more of a salsa style sauce.
Flat fish in the summer months are just fabulous. For this recipe, I've used john dory, a brilliant fish for home cooking as the skin, once patted dry, acts as a fantastic nonstick barrier.
Pretty much every fish in the sea will work for this recipe so pick what's freshest!
Lemon sole, megrim and plaice are all excellent substitutions.
Dory is on the trickier side to prepare whole as it has ferociously sharp fins, so do ask your fishmonger to fillet it for you.

Ingredients For the potato wedges:
500g potatoes
6 cloves of garlic
½ bunch of rosemary
2 tbsp rapeseed oil
For the John Dory:
4 x 130g fillets of john dory
2 tbsp rapeseed oil
Fine sea salt
For the salsa verde:
1 bunch flatleaf parsley
2 sprigs of mint
2 sprigs of dill
1 tsp capers
1 lemon, juice and zest
1 clove of garlic, minced
3 tbsp rapeseed oil

Method
For the potato wedges, preheat oven to 190°C/Gas mark 5.
Slice the potatoes into evenly sized wedges.
Place in a large saucepan along with the garlic cloves and rosemary. Fill to cover with cold water and season generously with salt. Place on a medium heat and simmer until tender. Approximately 10-12 minutes.
Remove from the heat and drain off the water through a colander. Toss the potatoes and allow to steam for 3 minutes.
Place the potatoes along with the garlic and rosemary on a large roasting tray and drizzle with rapeseed oil and toss to coat. Season and bake in the oven for 30-35 minutes. Turning the wedges halfway through.
To make the salsa verde, roughly chop the herbs and place in a food processor along with the remaining ingredients. Pulse to combine. Taste to adjust seasoning.
Remove the fish from the fridge 15 minutes before you intend to cook it. Pat dry to remove any excess moisture and season with fine sea salt.
Preheat your frying pan on a medium-high heat for 2 minutes.
Add the rapeseed oil before placing the John Dory in the pan, laying the fillet down and away from you, to avoid oil splatters. Once in the pan, do not disturb the fillet or move the pan. Allow the crust of caramelisation to develop evenly, approximately 2-3 minutes. Using a fish slice, confidently lift the fillet from the pan and place on a baking tray.
Transfer to the preheated oven for between 1-2 minutes, depending on the size of the fish.
Fish tales
Preheating your frying pan is the most crucial step in pan frying a piece of fish. The goal is to achieve an even temperature across the full surface area of the pan. Cold pockets will cause your fish to stick.
No matter what piece of fish you are cooking when removing from a pan always lift from the tail end of the fish. It causes less damage to the skin.
Make sure you're using a pan that's large enough for the number of portions you're cooking. Avoid overcrowding the pan, each addition to a cooking surface reduces the temperature of the pan. Work in batches if needs be.
The salsa verde will keep for up two days in the fridge. Sauces, like these, however, are best made on the day.
To get ahead, I often par boil my wedges the day before. Spending the night in the fridge helps the potatoes to dry out, resulting in a crisper chip.

Seafood Made Simple: Flex your mussels with this risotto
Risotto alla Milanese is an iconic rice dish from Milan. It is typically made with saffron, bone marrow, an intense beef stock and generously finished with parmesan cheese. It's most often served with another famous Milanese dish; Osso Buco, braised bone-in veal shanks. Saffron, the hand-picked and dried stigmas of the crocus sativus flower, provides the risotto with its distinctive warm yellow hue and a wonderful floral undertone flavour to this dish. Saffron is a pricy ingredient, also known as red gold and considered the most expensive spice in the world. A little of these crimson strands goes a long way; when added to a dish that mainly consists of rice it balances out the economics. As always taking an oceanic approach, here I've opted to use mussel stock which rivals any beef stock when it comes to providing a rich and intense flavour. This dish is visually very impressive and just requires a handful of good quality ingredients to produce. I've also omitted the traditional parmesan used in risotto; with the inclusion of umami-rich mussels it's simply not needed. There are also very few seafood dishes that I think need the addition of cheese. Not to be intimidated, risotto-making is a walk in the park once you're patient, committed to stirring the pot regularly and adhere to a few key principles. The grain of rice you choose to use is the most important decision. Only arborio, carnaroli or vialone nano will do. All three are short-grain varieties that have a high starch content, yielding perfect creamy results. The stock being well-flavoured is imperative too. Gradually adding a well-seasoned stock will add layers of flavour to the risotto. The stock being warm is vitally important to produce a creamy risotto, the heat aiding the grains of rice to absorb the stock and release their natural starches. Servings 4 Preparation Time 25 mins Cooking Time 50 mins Total Time 1 hours 15 mins Course Main Ingredients 1kg mussels, cleaned 125ml white wine 1 onion, finely diced 1 stick of celery, finely diced 3 tbsp olive oil 3 cloves of garlic, minced 65g butter 300g arborio or carnaroli rice 1ltr vegetable stock ½ tsp saffron 1 bunch parsley 1 lemon Cracked black pepper Method Heat a medium-sized heavy-based saucepan on high. Add the cleaned mussels to the preheated pot, immediately following with the white wine and cover with a tight-fitting lid. Give it a quick shake and allow to cook undisturbed for 3 minutes. Remove the lid and pass the mussels through a colander with a bowl underneath to reserve the stock released from the mussels. Pass the mussel stock through a fine sieve to remove any grit. Discard any mussels that haven't opened. Pick the mussels from their shells and set aside. In a large heavy-based pot, sweat the onion and celery in the olive oil gently for 5-6 minutes to soften and sweeten, being careful not to allow the vegetables to catch. Season with salt. While that's happening, combine the reserved liquid from the mussels with the vegetable stock and add the saffron to infuse. Place on a low heat to warm. Add the minced garlic and sweat again gently for 2 minutes. Add the butter, allow to melt and then add the rice and cook for 2 minutes, stirring to make sure all the grains of rice are coated in the butter. Season with sea salt. Using a ladle or measuring jug add approximately 100ml of the stock to the pot at a time, stirring regularly using a wooden spoon Allow the rice to absorb the stock and release its natural starches before adding any extra. This will take 20-25 minutes over a medium heat. Once all the stock has been added and the rice is cooked add the picked mussels to the pot to warm through. Taste to correct seasoning and finish with lemon juice, parsley and freshly cracked black pepper. Fish tales To clean mussels, fill a large bowl with water and add the mussels. Using a small paring knife, remove any barnacles from the shells and the beard of the mussel. The beard is what the mussel uses to attach itself to the surface on which it grows; you'll find it halfway up the mussel. Rinse the cleaned mussels in a colander and refrigerate until just before cooking. Mussels should only be cooked when alive so discard any that have cracked shells or do not close when tapped. They should smell fresh and of the seaside. If storing uncooked mussels in the refrigerator cover with a damp tea towel. Mussels and the liquid released when cooking are both high in salt, so be sure to taste before seasoning. Seafood Made Simple: My chilli oil recipe is perfect for salads, rice and these steamed mussels
Fermented hot sauces, crispy chilli oils and hot honeys have become staple condiments within the Irish pantry. The emergence of Lao Gan Ma into the European market was the catalyst for this demand of chilli flavoured oils. I came across Lao Gan Ma for the first time in 2019, during lockdown, having a little more time on my hands to browse the shelves in the Asian supermarket. It's the original crispy chilli oil, utterly addictive with crunchy fried chillies and MSG. Tao Huabi opened a noodle shop in the 1990s in Guizhou, China where she served a crisp chilli oil. It became so popular that customers were coming to the restaurant just to buy this sauce and in 1996 the first factory producing Lao Gan Ma was established. The range has expanded with a variety of ingredients added to this base sauce. You'll find Lao Gan Ma with mushrooms, fermented soya beans, peanuts and even a kohlrabi, peanut and tofu version. I take immense pleasure in making store cupboard essentials like this myself. They make for fantastic gifts and there is something so satisfying about having a jar of deliciousness like this on your shelf that you've made yourself. So, I'm sharing a very simple chilli oil recipe, served here with a bowl of Shaoxing wine steamed mussels that you can have a go at making yourself. I'll use this in salad dressings, over rice and noodle dishes and in dipping sauces. It's excellent with eggs and equally brilliant over steamed fish and vegetables. Shaoxing wine is key for this bowl of brothy mussels. A fermented rice wine widely used in Chinese cookery it adds a wonderful aromatic and savoury flavour to dishes. You'll find it along with black rice vinegar and Korean chilli flakes at your local Asian supermarket. Servings 4 Preparation Time 10 mins Cooking Time 20 mins Total Time 30 mins Course Main Ingredients For the mussels 1kg mussels 2 tbsp rapeseed oil 6 cloves of garlic, finely sliced 1 thumb of ginger, finely sliced 200ml Shaoxing wine 1 bunch of scallions chopped, to garnish For the chilli oil 500ml vegetable oil 60g gochugaru (Korean chilli flakes) 4 cloves garlic, smashed 1 thumb-sized piece of ginger sliced 2 star anise 1 tsp coriander seeds 1 cinnamon stick 2 bay leaves 2 tbsp black rice vinegar Method To make the chilli oil, heat a heavy-based saucepan over a medium-high heat. Add the vegetable oil and bring to 80°C.. Add the ginger and garlic to the oil and cook for eight to 10 minutes until they begin to turn golden brown. Add the star anise, coriander seeds, cinnamon stick and bay leaves and cook for a further four minutes until fragrant. Place the chilli flakes in a large heatproof bowl Pass the oil through a heatproof stainer and add to the bowl of chilli flakes. Discard the ginger, garlic, bay leaf, and spices. Carefully add the vinegar to the chilli oil and allow to stand before storing in a sterile jar. For the mussels. fill a large bowl with water and add the mussels to the water. Using a small paring knife remove any barnacles from the shells and the beard of the mussel. The beard is what the mussel uses to attach itself to the surface of which it grows. Rinse the cleaned mussels in a colander and refrigerate until just before cooking. Heat a heavy-based large pot on medium high heat. Cook the sliced garlic and ginger in the rapeseed oil for one to two minutes. Keep them moving to avoid burning. Add the mussels to the pot and immediately follow by adding the Shaoxing wine. Place a tight-fitting lid on the pot. Give the pot a little shake and leave to cook covered for three minutes. Remove the lid. All the mussels should be cooked and open at this stage. Discard any that haven't opened. Add a couple of tablespoons of chilli oil and the chopped scallions and serve. Fish Tales Mussels should only be cooked when alive, so discard any that have cracked shells or do not close when tapped. They should smell fresh and of the seaside. It's very important when seasoning shellfish dishes to taste before you add any salt. Mussels are naturally high in salt. A temperature probe is key for making chilli oil to ensure accuracy and prevent the spices from burning. Use a pot large enough to fill only halfway when heating large amounts of oil. Make sure to use a flavourless high smoke point oil for this recipe. Korean chilli flakes are great for this oil as they are not aggressively hot in flavour.
