Vegetables have striking flavours, too, but the best home-cooked fare, ranging from crisp domatokeftedes made with the island's sweet cherry tomatoes to garlicky olive oil-doused yellow split pea fava, is generally found in tavernas away from the caldera's crowded rim. Best all rounders To Psaraki With its tiny port, gritty black-sand beach and museum dedicated to the tomato paste industry that once flourished in Santorini, Vlychada is rarely on tourist radars. It's worth making the trek to this low key seaside resort on the island's southern tip, however, for To Psaraki, an unpretentious fish taverna on a strip of road high above the beach. Here chef Thanasis conjures up a magical selection of dishes, including his signatures: herb-grilled sardines topped with chopped onions and served with a lemon sauce and flame-charred aubergine puree with smoked eel. The offering varies depending on what the fisherman happens to catch that day.
