Abacá Puts a California Spin On Traditional Filipino Cuisine
Just a block away from Fisherman's Wharf, chef Francis Ang is creating modern Filipino food in San Francisco's Kimpton Alton Hotel. He hopes to pay homage to traditional recipes while using California ingredients — plus plenty of pork. 'Pork in the Philippines is a very big protein, there's a lot of different variations of pork,' Ang explains. 'We have our lumpia, we have our sisig.' A day of prep starts with Ang grilling and breaking down softly cooked pig's heads, braising the bones for broth. He uses every part of the head, even putting aside the brain for the sisig fried rice. He preps the fried rice for service by stir-frying pork, chicken livers, distilled vinegar from the Philippines, calamansi juice, and soy sauce, which is cooked with rice right before being served. Ang looks for specific marbling in pork shoulder that is chopped up and ground into filling for lumpia. Handmade, round wrappers are filled with piped filling, inspired by Ang's background as a pastry chef. The frozen prepped lumpia is double-fried and served in a lettuce wrap for each order. Fertilized duck eggs are prepped for a balut dish from Abacá's secret menu, with fried duck fetus served with a duck bone broth and crispy duck central mission of the Bay Area restaurant is making Filipino food more approachable and introducing diners to the food Ang grew up with. 'A lot of times people say 'I love coming here, now I'm going to visit the Philippines,'' he says. 'I think that makes us proud.' Cologne: Around 20,000 people being evacuated after unexploded Second World War bombs discovered
Around 20,000 people are being evacuated from their homes in the German city of Cologne as experts try to defuse three Second World War bombs. It's the biggest ever post-war evacuation in the city and follows the discovery of two 1,000kg and one 500kg American devices on Monday. The size of the bombs means that a thousand-metre danger zone has to be cordoned off and closed. Starting from 8am on Wednesday, officials will go door-to-door to check that businesses and houses in Cologne's Old Town and Deutz areas are empty. Nine schools, 58 hotels, a hospital, the main city hall and the area close to Cologne's famous UNESCO-listed cathedral are among the numerous places temporarily off limits. Two shelters have been set up for those affected. Second World War. Experts estimate around 20 per cent didn't fully detonate. Some of these so-called "duds" still lie unexploded beneath the streets and have prompted numerous evacuations over the years. In 2024, 31 bombs were found in the city, requiring 17 evacuations, impacting more than 36,000 people. Among the duds discovered were a 1,000kg American bomb and five 500kg bombs, as well as several grenades. 8:18 City officials have told Sky News that the plan is to try to defuse the bombs. If that isn't possible, then another option would potentially be to detonate them safely. This would be a much larger operation and require sand and water to be brought to the area to help limit the blast damage. Authorities hope that if all goes to plan, bomb disposal experts will be able to defuse them in time to allow people to return to their houses by Wednesday night.

New Covid variant may spread more easily than others
A new Omicron subvariant, NB.1.8.1, is spreading in the U.S. after a surge in China, though LP.8.1 remains the dominant strain nationally. The World Health Organization has designated NB.1.8.1 a variant under monitoring, noting its spread to 22 countries, including the U.S., and a rise in prevalence from late March to April. The WHO states that current data suggests NB.1.8.1 does not cause more severe illness than other variants, but it may spread more easily due to its ability to bind more tightly to human cells. Experts believe current Covid vaccines should remain effective against NB.1.8.1 in preventing severe disease. The Trump administration's plan to limit access to Covid vaccines is raising concerns among experts about potential impacts on vaccine availability and insurance coverage.
