Chop, chop: How to make this perfect pork dish this weekend

Ingredients Serves: 2 2 bone-in pork chops (150–200g each, about 2cm thick) 1 tbsp olive oil 1 tsp smoked paprika 1 tsp garlic powder Salt and black pepper, to taste Chorizo jam 100g chorizo, finely diced 1 small red onion (about 80g), finely chopped 1 garlic clove, minced 1 tbsp balsamic vinegar 1 tbsp honey 50 ml red wine 1 tsp tomato paste Apple and watercress salad 1 Granny Smith apple, cored and thinly sliced 50g watercress, washed and dried 1 tbsp lemon juice 1 tsp extra virgin olive oil Pinch of salt Method Preheat the oven to 200C (fan 180C). To begin, pat the pork chops dry with paper towels. Rub both sides with olive oil, smoked paprika, garlic powder, salt, and black pepper. Set aside to marinate while preparing the jam. Heat a small saucepan over medium heat. Add the diced chorizo and cook for 3–4 minutes, stirring, until the fat renders and the chorizo crisps slightly. Add the red onion and garlic. Cook for 5 minutes, stirring occasionally, until softened. Stir in the balsamic vinegar, honey, red wine and tomato paste. Reduce heat to low and simmer for 8-10 minutes, stirring occasionally, until thickened to a jam-like consistency. Remove from heat and set aside. Now to cook the pork chops. Heat an oven-safe frying pan over medium-high heat. Add a drizzle of olive oil. Sear the pork chops for 2-3 minutes per side until golden brown. Transfer the pan to the preheated oven and roast for 6-8 minutes. Remove from the oven, cover loosely with foil, and rest for 5 minutes. Next in a mixing bowl, toss the sliced Granny Smith apple with lemon juice to prevent browning. Add the watercress, drizzle with extra virgin olive oil, and sprinkle with a pinch of salt. Toss gently to combine. Place a pork chop on each plate. Spoon a generous dollop of chorizo jam over the top or serve on the side. Arrange the apple and watercress salad next to the pork chop. Serve immediately, with a glass of crisp white wine or sparkling water for a refreshing pairing. Tip – make the chorizo jam ahead and store in an airtight container in the fridge for up to 5 days. It is once again time for Caprice Bar at Four Seasons Hotel Hong Kong to refresh their yearly bar menu – this time named Elements. Bar manager Anyss Saintilan has spent months perfecting nine cocktails inspired by fundamental elements and textures found in nature, namely Flower, Cotton, Water, Leaf, Leather, Fire, Feather, Wood, and Air. The menu is presented in an innovative wooden frame containing nine boxes that guests can swivel to reveal tasting notes, and even slide open to interact with the key ingredients. Water is a refreshing Champagne-based cocktail with oyster leaf and elderflower that carries a hint of mango and pineapple, despite containing no fruits whatsoever. Pandan lovers will enjoy the gin-based Leaf, a tropical tall drink with celery, lime, sugar, and a dash of absinthe. The further down the menu, the more spirit-forward the drinks get, such as Air, a white Negroni with cucumber-infused gin, Lillet, and Suze that will feature different fruit notes through the year. Other notable mentions include Wood, containing cognac aged in burned sandalwood that allows the spirit to taste different upon each return to Caprice; and the soft, minty Cotton, which is a lovechild of the Grasshopper and the Ramos Gin Fizz. All cocktails are available at $220, and are the perfect accompaniment to the lovely harbour view from Caprice Bar.

New S.F. block party aims to revitalize Mint Plaza

A new weekly block party is taking over San Francisco's Mint Plaza this summer and Mayor Daniel Lurie is certain it's the kind of event that will 'bring downtown back.' MintedSF plans to highlight the culture and creativity of the Bay Area while reactivating the space between Fifth and Mint streets, with free weekly live music performances across a variety of genres, from pop and R&B to house and reggaeton from 5-9 p.m. Fridays starting July 4. 'This spot is gonna be popping,' Lurie said in a video filmed at Mint Plaza and shared to Instagram on Monday, June 16. The series is set to launch with musical acts Elements and Rojai in the Pocket. MintedSF organizers are inviting the public to vote on which DJ crew will conclude its run on Sept. 19. Interested acts can apply online until July 15 for consideration. Voting during the remainder of July will determine who gets the closing slot. Other confirmed programming include a set by vinyl-only DJ crew Sweater Fun, tropical bass act Sazon Libre and DJ and instrumentalist J Boogie's Dubtronic Science. Presented by downtown creative events agency Make It Mariko and funded by the Office of Economic and Workforce Development, the all-ages series also promises visual artists and pop-ups for attendees to enjoy. Mint Plaza restaurants Sushi Hashiri, Burma Love and 54 Mint will offer exclusive to-go and dine-in menus during each event. 'We're celebrating the rhythm, flavor and resilience of San Francisco — not by chasing what's gone and who left, but by lifting up who has always been here,' Gina Mariko Rosales, CEO of Make It Mariko, said in a statement. While MintedSF is free, attendees are encouraged to RSVP online for opportunities to win prizes and restaurant vouchers. 'San Francisco is alive because of the people who never gave up on it, and MintedSF is here to honor them,' Rosales said. 'This weekly series is for the locals and lovers of the city who've been building community, creating and showing up through it all.'
