How to Cook Steak Like a Michelin-Starred Chef

Whether you want your steak bloody as hell or burnt to a crisp, the only truly wrong way to cook your beef is to not hit your desired temperature. The co-chef of a hit London restaurant has called upon his time in Michelin-starred kitchens to create one of the best guides we've seen for grilling your steak to your ideal doneness, from very rare to well done and temps in between. Will Murray founded Fallow in London with fellow chef Jack Croft after the duo came up together at Michelin two-starred Dinner by Heston Blumenthal. 'Jack and I bonded over finding ways to use kitchen by-products, which we turned into staff meals and snacks,' Murray told Luxury London. 'The biggest lesson I learned there was to always look for ways to innovate, even with the humblest of ingredients.' From there, the pair started doing pop-ups that featured their style of nose-to-tail cuisine, and after opening Fallow, they turned their kitchen into an open-source hub for culinary technique, filming handy guides to cooking like a pro chef at home. And even for those who love a medium well steak, he shows that there's still a level of care needed to make sure it's cooked evenly through to the ideal temperature. The methodology that Murray employs was taught to him at Blumenthal's restaurant, after the famed and analytical chef behind the Fat Duck worked with food scientist Harold McGee for two years to develop a method to prepare steak to the proper doneness. This process begins with cooking on the grill (flipping often isn't actually a bad thing!) and then moving to a preheated oven for two-minute intervals when steaks are flipped and put back in the oven to bring them up to temp. Murray says that he's cooked so many steaks that he can feel the level of doneness by touching the steak, but likes to use a digital probe thermometer to check his work and hit the target temps below. Speaking at the ACCCIS 60th Anniversary Gala Dinner here tonight, Abang Johari said Sarawak is entering a new phase of economic development, and welcomed stronger engagement from the business community to seize opportunities in areas such as green energy and industrialisation. 'I hope ACCCIS, we work together. The moment the door knocks, then I call you, and you talk to them. That's where your joint venture comes in, and the Sarawak government will facilitate,' he said in his speech during the ACCCIS 60th Anniversary Gala Dinner at a hotel here tonight. He noted that ACCCIS has been a partner to the state government since 1965 and has contributed significantly to Sarawak's economic development. 'Of course, 60 years is a long journey and I believe that ACCCIS, as a partner to the government from 1965, have done and contributed a lot to the economic development of Sarawak. Thank you very much, ACCCIS,' he said. Abang Johari went on to highlight Sarawak's focus on green energy as a key area for collaboration. 'Our strength is in energy. If your power is competitive and sustainable, people will bring their investments here,' he said, adding that joint efforts between the government and business sector are essential to attract industrial players to Sarawak. He also called on ACCCIS to play an active role in supporting the state's industrialisation drive, education development, and modern agriculture, all of which are aligned with Sarawak's long-term strategy to build a resilient and sustainable economy. Among those present were Deputy Premier Datuk Amar Dr Sim Kui Hian; Deputy Minister for Public Health, Housing and Local Government Datuk Michael Tiang; Kuching South Mayor Dato Wee Hong Seng; Associated Chinese Chambers of Commerce and Industry of Malaysia (ACCCIM) president Datuk Ng Yih Pyng; ACCCIS president Kong Chiong Ung and organising chairman Datuk Tan Jit Kee.

Fahmi: MCMC committed to assisting affected social media users

KUALA LUMPUR: The Communications Ministry through the Malaysian Communications and Multimedia Commission (MCMC), will continue assisting individuals and organisations facing issues related to access or content on their social media accounts. Communications Minister Datuk Fahmi Fadzil said that MCMC is committed to helping all affected users regardless of their status by reaching out directly to social media platforms on their behalf. "From time to time, MCMC or even myself will be approached by individuals or organisations that have had their accounts affected," he said. Fahmi was speaking to reporters after attending the Gabungan Kelab Media Malaysia (GKMM) 2025 Dinner held in conjunction with the National Journalists Day (HAWANA) 2025 celebration here last night. Also present were Malaysian National News Agency (Bernama) Chief Executive Officer Datin Paduka Nur-ul Afida Kamaludin, Bernama Editor-in-Chief Arul Rajoo Durar Raj, who is also the HAWANA 2025 Project Director, and Bernama's senior management. Fahmi also confirmed that Meta Platforms Inc (Meta) had clarified the status of Deputy Energy Transition and Water Transformation Minister Akmal Nasrullah Mohd Nasir's Facebook account, which had recently lost all its posts dating back to 2022. "The account was not hacked, apparently there was no other motive, but Meta has indicated that they are assisting to restore the posts," he said. Earlier, local media reported that Facebook page of a deputy minister has been sabotaged, resulting in the disappearance of his posts.
