
Souper Tuesday: Gem squash and parmesan soup with saffron
Who doesn't love gem squash? Buttered and sprinkled with Parmesan, what a treat. Here's how to get all of that squashy satisfaction in a luscious winter soup.
Some ingredients stand out from the pack. They're pure luxury on the palate. Like saffron. And truffles. And vanilla. Yes, despite the last word now being used to suggest something plain and obvious, vanilla, the ingredient, is one of the gems of nature, or that part of nature that we harvest and eat.
But South Africans have another ingredient that we hold close to our hearts while we wonder in amazement why the rest of the world seems blithely unaware of it. They call it a 'gourd'. They ask, what do you do with that?
I'm talking about our humble, beloved gem squash. And, as you may or may not know by now, the gem squash is the hero of one of my signature recipes, parmesan gem squash. And it's so much 'mine' that when you google those three words, guess whose recipe comes up at the top of the queue? I may have blushed.
But I have a gem squash soup as well, and guess what: it has parmesan in it too. And it has saffron too. And onion, and garlic, and cream, but no vanilla. That would be silly.
Tony's gem squash and parmesan soup with saffron
Ingredients
(Serves 2-4)
8 plump gem squash
4 Tbs Butter
2 medium onions, finely chopped
2 cloves garlic, smashed
1.2 litres veg stock
100ml cream
Generous pinch of saffron
2 Tbs grated or shaved Parmesan per portion
150g finely grated Parmesan
Salt and pepper to taste
Method
Melt butter in a big, heavy-bottomed pot. Add the onions and garlic and sauté gently on a low heat heat five minutes, stirring now and then.
Peel and chop the gem squash, remove the seeds and add.
Add the vegetable stock. Bring to a boil and then reduce to simmer for 20 to 25 minutes or until the squash is soft.
Cool a little and blend until smooth.
Return to the stove, pour in the cream and add the salt, pepper (go carefully, it must not overpower the saffron) and saffron. Bring to a simmer and cook gently for 10 to 15 minutes, stirring occasionally to ensure it doesn't catch at the bottom.
Taste and adjust seasoning of you like – that includes the saffron. If too subtle, add a little more and let it simmer to take up the flavour.
Finally, stir in the finely grated parmesan.
Serve with grated or shavings of Parmesan on top and a deft sprinkling of saffron. DM

Courgette, caperberry & blue cheese risotto
Risotto is stirring stuff. But the key is not to stir too vigorously. A gentle touch, slow and easy, is what risotto is all about. That way, you'll have a lovely risotto with every grain of rice intact. Beats a mush any day. Caperberries are more powerful than the milder capers, and carry a heavy punch of flavour. Courgettes are not strong on favour at all, but this makes them a good carrier for other tastes in the mix. The stock and cream in this risotto make everything smooth and creamy and lighten the flavour profile, and of course cheese makes the world a happier place. And this a happy dish. Ingredients 350 g courgettes, topped, tailed and grated 1 red onion, chopped finely 2 garlic cloves, chopped finely 1 Tbsp chopped caperberries Olive oil 500 g arborio rice 1 litre vegetable stock 100 ml dry white wine 80 g blue cheese, crumbled 250 ml cream 2 Tbsp chopped parsley Parmesan, Pecorino or Grana Padano shavings for garnish Whole and halved caperberries for garnish Salt and white pepper to taste Method Rinse the courgettes under cold running water, dry and set aside. Top and tail the courgettes and grate them. Pour the stock into a pot and bring to a boil. Turn off the heat or leave it on the very lowest heat, just to keep it hot. Keep a ladle handy. Sauté the onion and garlic in a little olive oil until soft. It does not need to be caramelised. Add the wine and cook it down by half. Add this to the stock. Pour more olive oil into the pot in which you cooked the onions and heat it, then add the rice and stir well so that every grain of rice is coated with olive oil. If it does not seem to be enough, add more oil. Start adding the stock a ladleful at a time, stirring now and then, slowly and gently, just to prevent it from sticking at the bottom of the pot. Repeat until half of the stock has been incorporated. Continue adding the stock as above, until it has all or mostly been used up. If (and this is important)… if you feel that the rice is cooked perfectly before the stock is all used, stop adding more. There's no law that says you must use all the stock; 800 ml or so might well be enough. There is another law though: risotto rice needs to be just a little al dente, but short of crunchy. That's what you're looking for. Stir in the grated courgettes and cook gently for three or four minutes, then add the cream and bring it back to a simmer. Season with salt and pepper and cook gently while the cream incorporates. Just a couple of minutes. Now stir in the crumbled blue cheese, and season to taste with salt and white pepper. Let it simmer for a few minutes more for the cheese to blend in, then stir in the chopped parsley. You can grate some Parmesan, Pecorino or Grana Padano over to finish it off. Garnish with a few whole and halved caperberries and chopped parsley. DM

Religious groups fined for starting latest fire in Table Mountain National Park
South African National Parks (SANParks) has issued fines to several religious groups found illegally starting fires in Table Mountain National Park, after a wildfire broke out just below Boyes Drive between Lakeside and Muizenberg on Sunday morning. The fire, which ignited in Peck's Valley, quickly prompted a multi-agency response but was successfully contained without any damage to property. The incident has once again highlighted ongoing tensions between religious worship practices – often conducted in secluded natural areas – and park safety regulations. While SANParks acknowledged the significance of spiritual use of the land, it reiterated that lighting fires in the park is strictly prohibited outside of designated areas.
