Known for its ever-changing rainbow of inventive flavors, this Portland, Ore., based ice creamery also shines a well-deserved light on vanilla in a recently re-launched cookbook. We got the scoop from founder Tyler Malek about his enthusiasm for that not-so-basic flavor.
When Salt & Straw launched in 2011, its mission was groundbreaking. Calling itself 'the biggest small-batch ice cream company in the world', Salt & Straw founder Tyler Malek and his cousin, Kim, cooked up the business plan over a cup of coffee. Of course.
In the book's intro, he writes of the fairy tale-type origin story: "I had just quit my job as the world's kindest and least effective car salesman (don't ask) and convinced Kim to consider me for the position of head ice cream maker for the shop she planned to open in Portland. Minor detail: I had never made ice cream in my entire life. So an hour later, I walked into a Goodwill in Seattle, bought four $4 ice cream makers, and started experimenting.
After a week of maxing out the machines, I had recipes for thirty flavors and sent them to Kim. Because of (or perhaps despite) the unlikely inspirations I dreamt up—grapefruit with sage, coffee with bone marrow—she agreed to give me a shot."
Coffee with bone marrow? Yes, those kind of crazy combos have garnered a whole lot of attention in the nearly 15 years since the Salt & Straw launch.
But it's the chapter on vanilla that steals the show in this inspiring, deeply informative cookbook co-authored with James Beard Award-winning food writer JJ Goode.
Malek is a self-described flavor nerd and it all begins with vanilla. 'I love the idea of using something people think of boring as jumping off point,' he said in a recent phone interview. Because, let's face it, the majority of most ice cream is vanilla based. 'It's so under-appreciated, but maybe that's because we all grew up with artificial vanilla flavoring.'
The chapter on vanilla explores the bean's beginnings as a commercial crop. 'There was a lot of frustration in trying to grow the pods without fruiting them until one kid, an enslaved person, figured out what a native bean was doing.'
By the way, there are 220 flavor compounds in vanilla. Far from boring.
For Malek, his vanilla curiosity was piqued when he connected with a geneticist working on project to bring vanilla production to Florida. 'Hawaii has had success growing vanilla and building agritourism around it,' he said.
Turning back the clock to the bean's early appearances in this country, the government mandated that just two types would be allowed as imports, Tahitian and Madagascar. But the rules weren't strictly enforced and those designations were watered down.
The key to growing quality vanilla is time, the plants develop complexity and depth of flavor as they age. A process that's similar to vinifera grapes, with the plants picking up characteristics of the soils and surroundings. In wine tasting terms, that's called terroir.
Like wine, coffee and chocolate, there's a new effort to highlight the growing practices used in production of vanilla beans, Malek said. 'There are new efforts to designate how it's sourced. Fair trade is better for the economy.'
And beans that are grown using sustainable agricultural practices ultimately leads to better-tasting vanilla. But let's not forget about all those amusing flavors from the brilliant creators that keep Salt & Straw in the must-try ice cream conversation.

Stranded in hostile territory, Torrance reluctantly joins forces with a fugitive passenger (Mike Colter) to evade local warlords and protect the survivors until rescue arrives. Watch it now on Netflix If you're in the mood for a gripping documentary, Netflix's latest one, "Titan: The OceanGate Disaster," takes a deep dive into the fatal implosion of the Titan submersible during its June 18, 2023, descent to the Titanic wreck site. All five people aboard were killed in the incident, including OceanGate CEO and pilot Stockton Rush. Drawing on archival footage, whistleblower testimony, and internal audio recordings, the documentary investigates how Rush's unchecked ambition and startingly risky decisions contributed to the tragedy. It also casts a critical eye on the tech world's relentless drive for innovation, highlighting the risks of prioritizing progress over safety. "Titan" offers a haunting exploration of ambition pushed to the brink as well as a cautionary tale about a visionary who believed in his creation so completely, he went down with it. It follows a married physicist couple, Nora (Lucero) and Héctor (Benny Ibarra), with a homemade time machine that accidentally zaps them from 1966 to the present day, Though they're stranded in a bold new era, both are still anchored by decades-old ways of thinking, which puts their relationship to the test. While her brilliance was dismissed in the '60s because of her gender, in 2025, Nora's talents are finally recognized and celebrated. Meanwhile, Héctor wrestles with feelings of insecurity and a mindset stuck in the past, struggling to keep up with the changes around him. People are seriously side-eyeing Kim Kardashian after she shared a screenshot of her ChatGPT conversation to her Instagram story on Wednesday. For those who don't know, ChatGPT is an app where users can speak with a chatbot that is generated by AI. Therefore, the chatbot is nothing more than a robot, which uses artificial intelligence to learn how each individual user wants to communicate with it and adapts its style accordingly. And this is why so many were left baffled by Kim's screenshot, which revealed that she speaks to the chatbot as though it is a human. Unfortunately for us, Kim only posted what appears to be the end of her and ChatGPT's conversation, with the first message in the grab reading from Kim: 'Thanks for taking accountability. That's huge in my book.' 'I really appreciate you saying that,' the chatbot replied. 'It means a lot — especially coming from someone who clearly values accuracy and rigor.'I'll keep raising my game to meet your standards,' the bot went on. 'If there's ever any doubt or if you want a deeper dive on anything, I'm here for it.''Thanks dude,' Kim wrote back, to which ChatGPT said: 'Anytime — you got it, dude😎 Let's crush the next one.'Kim posted the grab without further comment, but did add the '🥹' emoji, suggesting that she was genuinely touched by this exchange. But the people of the internet failed to see the same sentiment, and the screengrab quickly went viral on X as people shared their confused reactions to the conversation. Addressing Kim's first message in the chat, one person wrote: '……. this is the dumbest thing I've ever fucking seen? how did a language software take accountability??''What does a robot have to take accountability for?' one more asked. 'what's with people and developing an emotional connection with chatgpt do they not realize that it's fucking weird,' somebody else tweeted, with another echoing: 'is she really this lonely?''was she arguing with a fucking robot?' somebody else inquired, while another popular response pointed out the extreme environmental damage all forms of AI causes, reading: 'The temperature of the Earth just rose 1 degree for this….' Another X user simply concluded: 'Having convos with ChatGPT or AI in general is so embarrassing.' Kim's post actually came just one day after Time reported on a recent study from researchers at MIT's Media Lab, which found that ChatGPT may be 'eroding critical thinking skills.' The study split 54 subjects aged between 18 and 39 into three groups and asked them to write several SAT essays with either ChatGPT, Google, or nothing at was then used to record the writers' brain activity, and they found that of the three groups, ChatGPT users had the lowest brain engagement and 'consistently underperformed at neural, linguistic, and behavioral levels.'The study was conducted over several months, and found that ChatGPT users got lazier with each essay, and many resorted to just copy and pasting by the end of the study.
