Use your rice cooker to make the ultimate, easy chicken recipe
'Have you seen that woman who cooks an entire chicken in a rice cooker?'
I was at dinner the other evening when Joe Zee, the friend seated next to me, leaned over to show me an Instagram reel. It featured a London-based content creator named Shu Lin, making a recipe for salt-baked chicken in her rice cooker.
'I think I've made it a dozen times,' he said. 'It's really fantastic.'
The dish had all the hallmarks of a successful viral recipe: nostalgia, ease, a handful of ingredients and a kitchen appliance I already own.
Salt-baked chicken is a traditional Hakka dish, made by covering a chicken in seasoned salt and baking it until cooked through and tender. But I'd never seen it done in a rice cooker before.
The chicken requires minimal ingredients, including a marinade packet with ginger, salt and a variety of other seasonings, available at most Asian grocery stores. You cut up fresh ginger, scallions and shallots, stuff some into a whole chicken and drop the remaining aromatics into the bottom of a rice cooker. Cover the chicken with the contents of the seasoning packet and a neutral oil, then let the chicken cook in the rice cooker for 40 minutes.
The result is an incredibly moist and tender chicken you can serve over rice, eat alongside vegetables or on top of a salad. If you make rice, be sure to reserve the cooking liquid that collects at the bottom of the rice cooker to spoon over the chicken and fold through the rice.

Disneyland Paris booked for sick $150K ‘wedding' between adult and 9-year-old girl
Disneyland Paris workers were horrified to find a large wedding they were hosting was between a man and a 9-year-old girl — with the groom and child-bride's mom arrested in what is now thought to have been a sick $150,000 social media stunt. The French amusement park had been hired early Saturday for the ceremony in front of the Sleeping Beauty castle, with no forewarning that the bride was just a child, Le Parisien reported. Some 300 guests and a string quartet arrived at around 5 a.m., before the park was open for regular tourists — with horrified employees only then seeing how young the bride was, BFMTV reported. 5 Disneyland Paris was closed for a fake wedding between a 9-year-old girl and an adult man. BFM TV The 'scared and confused' little girl was wearing a wedding dress and five-inch heels 'taped to her feet,' Le Parisien reported. Staff called police, who arrested four of those involved — including the would-be groom, a 22-year-old British national, BFMTV said. They also arrested the 41-year-old mother of the 9-year-old girl, both of who had arrived in Paris from Ukraine two days before the sick ceremony, according to the report. Police also arrested two Latvian nationals, a 24-year-old woman recruited to play the role of the bride's sister, and a 55-year-old recruited to act as her father, BFMTV reported. 'The investigations, including the medical examination of the minor, a Ukrainian national, showed that she had not been subjected to any violence or coercive acts,' the prosecutor's office said, sggesting it was all 'a set-up.' Two people, the fake groom and the fake bride's sister, remain in custody and have been charged with 'fraud and breach of trust' against Disneyland Paris, which has also filed a complaint against the pair, BFMTV reported. Both were scheduled to appear in court in the town of Meaux on Monday as part of the opening of a judicial investigation. ESPN's Jay Harris shares major health update after prostate cancer reveal
'SportsCenter' anchor Jay Harris said he is recovering from a successful surgery to remove his prostate after revealing his cancer diagnosis earlier this month. In a social media video posted Monday, the 60-year-old ESPN stalwart explained his prostate cancer did not spread and that he's doing well while recovering at home. 'My doctor said the surgery went really well,' Harris said. 'So well, in fact, that the cancer that was in my prostate stayed there. It didn't spread to any surrounding areas. So when he took the prostate out, he took that with it. So it's all good. Harris added he'll be resting at home and will return to work next month. 'There are other details that I won't bore you with, but the main thing is, we're all good.
