When it comes to food and drinks, Italians take things very seriously, but a vodka brand based in southern Italy is inspiring a creative approach to cocktails that blurs the line between aperitivo and dinner. Known as Altamura Distilleries, founder Frank Grillo is both respectful of the Mediterranean country's rich culinary traditions, while also inviting bartenders and chefs in Italy and around the world to explore these traditions in innovative ways with its Italian premium vodka.
For Grillo, it all started with a loaf of bread—and not just any bread. In 2020, Grillo—an American with southern Italian heritage and a passion for cooking—came across a recipe for pane di Altamura. This particular baked good has Protected Designation of Origin status from the European Union, meaning that there are specific rules and regulations about where and how it can be made. Most notably, the dough must be prepared with varieties of Durum wheat semolina that grow only in Puglia.
After baking what he calls a 'rogue loaf' of pane di Altamura outside the regional boundaries, Grillo was intrigued by the flavor of the special wheat and asked himself: 'What if we could take this bread and express it in a liquid format, instead of a baked format?' A couple years after Grillo did just that, his curiosity and willingness to experiment at the intersection between food and drinks has spurred others to be equally playful with Altamura Distilleries vodka in terms of both mixology and pairings.
The savory notes of Altamura Distilleries vodka have inspired not only bartenders, but chefs, too.
Key to this is the savory flavor of the vodka, which reflects the terroir of Puglia and its ancient grains. Though vodka is not historically an Italian beverage or generally a spirit sipped slowly alongside meals, Grillo says this one is 'a food-friendly alcohol' and advocates pairing it with umami-forward bites, such as oysters or cheese, especially Parmigiano-Reggiano.
'It's like with cacio e pepe,' Grillo says, referencing the classic Roman pasta made with just cheese and black pepper. 'It's really simple ingredients, but it's really complicated to make because you've got to get it right. With vodka, you just have the grain, so it has to be high quality and very pure. There's nothing to hide behind.'

Meanwhile, at the hotel's bar, Atrium, head bartender Edoardo Sandri has crafted a cocktail known as La Merenda ('The Snack') featuring the vodka mixed with tomato cordial and garnished with basil chips and a sprinkling of Parmigiano, inspired by his childhood after-school snack of a mozzarella and tomato sandwich.

At a previous Florence Cocktail Week event, bartender Chiara Poloni further emphasized the naturally wheaty character of the vodka by washing it with butter for her cocktail Souvenir d'Enfance, reminiscent of a simple side of bread and butter. To the north, at Michelin-starred Moebius in Milan, bartender Giovanni Allario drew on his memories of growing up in Genoa, the birthplace of pesto, to create a Pesto Martini.
Across the Atlantic Ocean, Altamura Distilleries vodka made waves last year as a key ingredient in the Martini of the Year, according to Esquire. Served at Clemente Bar in New York City, its distinctly savory quality comes from curry paste, green chili chutney, and olive oil used to fat-wash the vodka.

TMC Maritime said the vessel has been slowly raised from the seabed, 50 meters (165-feet) down, over the past three days to allow the steel lifting straps, slings and harnesses to be secured under the keel. Eight steel lifting straps are being used to support the hull upright and to form part of a steel wire lifting system that began raising the vessel out of the water Saturday. As it is lifted up, sea water is pumped out of the hull. TMC Maritime said the vessel will be held upright, out of the water, for checks and preparations for its final journey. On Sunday, it is anticipated the floating crane platform will move the Bayesian to the Sicilian port of Termini Imerese, where a special steel cradle is waiting for it. The Bayesian is missing its 72-meter (236-foot) mast, which was cut off and left on the seabed for future removal. The mast had to be detached to allow the hull to be brought to a nearly upright position that would allow the craft to be raised. British investigators said in an interim report issued last month that the yacht was knocked over by 'extreme wind' and couldn't recover. The report said the Bayesian had chosen the site where it sank as shelter from forecast thunderstorms. Wind speeds exceeded 70 knots (81 mph) at the time of the sinking and 'violently' knocked the vessel over to a 90-degree angle in under 15 seconds. Lynch, who sold Autonomy, a software maker he founded in 1996, to Hewlett-Packard for $11 billion in 2011, had been acquitted on fraud charges in June 2024 by a federal court jury in San Francisco. Water is being pumped from Mike Lynch's superyacht as it was seen upright on the surface for the first time since it sank off the coast of Sicily. Seven people died when the Bayesian sank off the Italian island on August 19, including billionaire Mr Lynch, 59, and his daughter Hannah, 18. The 56-metre (184ft) yacht was seen being held in an upright position by one of Europe's most powerful sea cranes near the fishing town of Porticello on Saturday morning. A project insider told the PA news agency: 'The vessel is on surface, but not clear of the sea as yet. 'Pumping out of water will continue, and it will be lunchtime – following a series of lifting and resting procedures – before she will finally be fully and finally out of the water.' Salvage workers could be seen on the vessel, which is covered in mud and algae, while the canopy and guard rails are mangled. Investigators in the UK and Italy say raising the vessel is crucial to fully understanding what happened. The yacht's 72-metre (236ft) mast was cut off on Tuesday using a remote-controlled tool and rested on the seabed to be picked up later. Over the last few days, salvage teams have worked to ease the hull into an upright position and give access to the yacht's right side, which had previously been lying flat on the seabed 50 metres below the surface. Marine Accident Investigation Branch investigators said in an interim report that the Bayesian was knocked over by 'extreme wind'. The yacht had a vulnerability to winds, but the owner and crew would not have known, the report said. US lawyer Chris Morvillo and his wife Neda Morvillo, and Canadian-Antiguan national Recaldo Thomas, who was working as a chef on the vessel, also died in the sinking. Fifteen people, including Mr Lynch's wife, Angela Bacares, were rescued. Mr Lynch and his daughter were said to have lived in the vicinity of London and the Bloomers lived in Sevenoaks in Kent. The tycoon founded software giant Autonomy in 1996 and was cleared in June last year of carrying out a massive fraud over the sale of the firm to Hewlett-Packard (HP) in 2011. The boat trip was a celebration of his acquittal in the case in the US.
