Fragrant Nigerian-inspired fried rice is easy enough for a weeknight

Nigerian fried rice, seasoned with curry powder, dried thyme and a handful of aromatics, inspired this weeknight-easy meal-in-a-skillet.
Beef liver and an assortment of vegetables are classic ingredients, but in this recipe from our cookbook ' Milk Street 365: The All-Purpose Cookbook for Every Day of the Year,' we opted for chicken thighs and fresh green beans.
Seeded, thinly-sliced jalapeño or Fresno chilies bring a pleasant heat, while curry powder adds depth, warmth and a golden hue.
Instead of using just-cooked rice, which results in a softer texture in the finished dish, we start with plain cooked rice that's been chilled and dried, a process that allows the starches to recrystallize so the grains 'fry' up light and fluffy. Fragrant basmati is especially good, but any variety of long-grain white rice works.
Fresh rice needs two hours minimum to chill adequately, but it can be prepared up to three days in advance and kept refrigerated. To chill the rice, fluff with a fork, then spread on the baking sheet. Let cool, then cover and refrigerate until cold.
Don't be afraid to really scrape up the browned bits from the surface of the skillet after you've added the broth. The caramelization gives the fried rice great depth of flavor. Serve sprinkled with scallion greens and additional sliced chili.
Curried Chicken Fried Rice with Chilies
Start to finish: 40 minutes
Servings: 4
Ingredients:
3 tablespoons neutral oil or refined coconut oil, divided
1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces
2 teaspoons curry powder, divided
Kosher salt and ground black pepper
4 scallions, thinly sliced, whites and greens reserved separately
2 tablespoons minced fresh ginger
4 ounces green beans, trimmed and cut into 1-inch pieces
1 teaspoon dried thyme
1 Fresno or jalapeño chili, stemmed, seeded and thinly sliced
4 cups cooked and chilled long-grain white rice, preferably basmati
1 cup low-sodium chicken broth
Directions:
In a 12-inch skillet over medium-high, heat 2 tablespoons of the oil until barely smoking. Add the chicken and sprinkle with ½ teaspoon of the curry powder, ½ teaspoon salt and ¼ teaspoon pepper. Cook, stirring occasionally, until evenly browned, 4 to 6 minutes.
Push the chicken to the perimeter of the pan. To the center, add the remaining 1 tablespoon oil, scallion whites and ginger; cook, stirring, until lightly browned, about 1½ minutes. Into the scallion mixture, stir the beans, thyme, half of the chili, the remaining 1½ teaspoons curry powder and ¼ teaspoon each salt and pepper. Stir the chicken into the bean mixture; cook, stirring occasionally, until the beans are bright green, about 2 minutes. Stir in the rice, then add the broth and scrape up any browned bits. Cook, stirring, until the liquid is absorbed, 3 to 5 minutes.
Off heat, taste and season with salt and pepper. Serve sprinkled with the scallion greens and remaining chili.

Oh no, the peas bring another level to this gastropub favourite. I scatter in the whole peas and also use some to create a vibrant dressing so you're using all of the pea's natural strengths. Overview Prep time 15 mins Cook time 15 mins Serves 4 to 6 Ingredients 4 thick slices of white bread from a loaf, cut into chunks 3-4 tbsp olive oil 2 skinless chicken breasts 2 Romaine lettuces 250g frozen peas 1 garlic clove, crushed or finely grated 4 anchovies from a tin 4 tbsp mayonnaise ½ tbsp extra-virgin olive oil, or as needed Zest and juice of 1 lemon 15g Parmesan, grated, plus extra (optional) for shaving Method Step Preheat the oven to 200C/180C fan/gas mark 6. Step Scatter the bread chunks (from 4 thick slices of white bread) over a baking tray then drizzle with enough olive oil to coat them well. Step Season with a little salt and freshly ground black pepper, then bake in the hot oven, tossing every now and then, for 10-15 minutes or until golden and crisp. Set aside. Step Meanwhile, season 2 skinless chicken breasts generously all over with salt and pepper, then fry in a frying pan over a medium heat for 10-15 minutes, or until lightly browned and cooked through. Set aside. Step Break 2 Romaine lettuces apart and separate them into single leaves. Place the lettuce leaves either on a serving platter or in a large salad bowl, ready to toss together with everything else. Step Place 250g frozen peas in a heatproof bowl and cover them with freshly boiled water to defrost. Leave for a few minutes and then drain. Step Add 1 crushed or finely grated garlic clove, 4 anchovies, 4 tbsp mayonnaise, ½ tbsp extra-virgin olive oil, the zest and juice of 1 lemon and 15g grated Parmesan to the processor, then blitz to a smooth, thin dressing. If you need to thin the dressing down a bit, add a splash of water or more extra-virgin olive oil. Taste for seasoning then adjust with salt and pepper to taste. Step Pour the dressing over the lettuce leaves and peas, then toss in the croutons. Chop or shred the chicken and add that in too, then toss everything together. Serve the salad with some extra Parmesan shavings, if you like.

Martin Komol sighs as he inspects his cracked, mud-walled house that is one rain away from fully collapsing. Nothing seems to last for him and 300,000 other refugees in this remote Kakuma camp in Kenya — now, not even food rations. Funding for the U.N. World Food Program has dropped after the Trump administration paused support in March, part of the widespread dismantling of foreign aid by the United States, once the world's biggest donor. That means Komol, a widowed father of five from Uganda, has been living on handouts from neighbors since his latest monthly ration ran out two weeks ago. He said he survives on one meal a day, sometimes a meal every two days. 'When we can't find anyone to help us, we become sick, but when we go to the hospital, they say it's just hunger and tell us to go back home,' the 59-year-old said. His wife is buried here. He is reluctant to return to Uganda, one of the more than 20 home countries of Kakuma's refugees. Food rations have been halved. Previous ration cuts led to protests in March. Monthly cash transfers that refugees used to buy proteins and vegetables to supplement the rice, lentils and cooking oil distributed by WFP have ended this month. Each refugee now receives 3 kilograms (6 pounds) of rice per month, far below the 9 kilograms recommended by the U.N. for optimal nutrition. WFP hopes to receive the next donation of rice by August. That's along with 1 kilogram of lentils and 500 milliliters of cooking oil per person. 'Come August, we are likely to see a more difficult scenario. If WFP doesn't receive any funding between now and then, it means only a fraction of the refugees will be able to get assistance. It means only the most extremely vulnerable will be targeted,' said Colin Buleti, WFP's head in Kakuma. WFP is seeking help from other donors. As dust swirls along paths between the camp's makeshift houses, the youngest children run and play, largely unaware of their parents' fears. But they can't escape hunger. Komol's 10-year-old daughter immerses herself in schoolbooks when there's nothing to eat. 'When she was younger she used to cry, but now she tries to ask for food from the neighbors, and when she can't get any she just sleeps hungry,' Komol said. In recent weeks, they have drunk water to try to feel full. The shrinking rations have led to rising cases of malnutrition among children under 5 and pregnant and breastfeeding mothers. At Kakuma's largest hospital, run by the International Rescue Committee, children with malnutrition are given fortified formula milk. Nutrition officer Sammy Nyang'a said some children are brought in too late and die within the first few hours of admission. The 30-bed stabilization ward admitted 58 children in March, 146 in April and 106 in May. Fifteen children died in April, up from the monthly average of five. He worries they will see more this month. 'Now with the cash transfers gone, we expect more women and children to be unable to afford a balanced diet,' Nyang'a said. The hospital had been providing nutrient-dense porridge for children and mothers, but the flour has run out after stocks, mostly from the U.S., were depleted in March. A fortified peanut paste given to children who have been discharged is also running out, with current supplies available until August. In the ward of whimpering children, Susan Martine from South Sudan cares for her 2-year-old daughter, who has sores after swelling caused by severe malnutrition. The mother of three said her family often sleeps hungry, but her older children still receive hot lunches from a WFP school feeding program. For some children in the camp, it's their only meal. The program also faces pressure from the aid cuts. 'I don't know how we will survive with the little food we have received this month,' Martine said. The funding cuts are felt beyond Kakuma's refugee community. Businessman Chol Jook recorded monthly sales of 700,000 Kenyan shillings ($5,400) from the WFP cash transfer program and now faces losses. This was a tough assignment. I was making images around Johannesburg for World Environment Day 2018 and I thought I'd follow the trash to Robinson Deep, the oldest and biggest landfill in the city. I had a basic idea of where the things we throw away end up, but seeing our trash in real life, in that quantity, and not disintegrating, was eye-opening. The smell was overpowering. The sounds of tractors churned against the constant noise made by baby mice squeaking under the huge mounds of waste. I was probably stepping on them but I couldn't see them, nor do anything differently. At one point I stepped on a cow's head. Thank God I was wearing rubber boots that day – boots that the dozens of people eking out a living on the landfill didn't have. They didn't have any proper protective gear: no gloves, masks or proper shoes. This image of a man carrying a giant bag that looks like a cape, with an ibis hovering over him, was made with a long lens. I was too far away to get to him in time to ask his name before he disappeared over the hill, but I spoke to many others there. They spoke of being ill from working on the landfill but not having a choice. Some of them cook and eat their meals on the site. Some even live there. I recall the moment when a truck arrived bearing a new load and everyone ran toward this waterfall of garbage to get whatever they could – the plastic or glass that could be taken to the buy-back centres and exchanged for a few rand. This scene is not particular to Johannesburg. It happens every day in landfills all over the world. These reclaimers, like the man in the picture, are the 'invisible people', to the upper classes in particular. They are part of the landscape but are living on the precipice. Many of them are very vulnerable and have a reliance on substances. Particularly rife in Johannesburg is nyaope, or heroin. At some of the buy-back centres, drugs are sold at the doors. People take in the waste they've collected, get their money, then buy their shot for the day. It's a cycle of violence. I cannot fathom why we are living in a society that allows this to happen to our most vulnerable people. A lot of my work is about understanding the world and how I live in it. It takes me to places I wouldn't ordinarily go to, and I speak to people I wouldn't usually interact with. It helps me overcome my blind spots. We always talk about our separation from the natural world when we talk about the climate crisis, but this image is a reminder that we are an intrinsic part of it. The bird and the man are both searching. It reinforces that we are in this together: our wellbeing is interconnected. There is symbolism too. The bird gives the impression of a vulture, though it's not, which carries with it the idea of hunger and death. My photography is a balancing act. I want to compose images that are visually attractive and draw attention, but also create dialogue and, at the very least, a stirring of the heart. It is so important to talk about the meaning and not be taken up by the beauty of an image. I want to create empathy without reinforcing those blindspots. But the idea of objectivity in journalism is a myth. You can have ethical and balanced reporting, but what you choose to leave in and out of your frame is your bias. As a South African, I feel a deep responsibility to stand against injustice. My generation was the last that grew up under apartheid, before the 'born-frees', and I come from a family of anti-apartheid activists who were very involved in our community. I understand segregation and systemic injustice and discrimination. I remember my mum being dragged off to jail by security forces. I remember coming home and a piece of furniture would be gone. My mother would have given a table or bed away because someone needed it more than we did. Helping the community survive and thrive meant sharing resources. It helped me understand a radical care that stems from our inextricable interconnectedness in this world, and that still informs my work.
